3 (10.75 ounce) cans low-sodium chicken broth
2 (15 ounce) cans green beans, drained
3 cups cubed fully cooked ham
1 (10.75 ounce) can condensed cream of chicken soup

1 (3 ounce) can real bacon bits
¼ teaspoon ground black pepper
1 (8 ounce) package cream cheese, softened

2 pounds fresh green beans, trimmed and snapped
48 ounces water
1 ½ pounds smoked ham, cut into chunks
2 cubes chicken bouillon
½ teaspoon paprika
¼ teaspoon cayenne pepper
4 tablespoons butter
4 tablespoons quick-mixing flour (such as Wondra®)
½ onion, finely diced
1 teaspoon dried minced onion
1 teaspoon paprika
½ teaspoon ground black pepper
¼ cup water
1 ½ cups sour cream

Steps:

  • Cover green beans with water in a large pot. Add ham, bouillon, paprika, and cayenne. Bring to a boil over high heat; reduce heat to low and let simmer until beans are tender, about 30 minutes. Remove from heat and let cool, 20 to 30 minutes.
  • Meanwhile, melt butter in a frying pan over medium heat. Add flour and cook until almost brown, 3 to 5 minutes. Stir in diced onion; cook until it begins to brown, 7 to 8 minutes. Reduce heat to medium-low; cook and stir dried onions in the mixture until they begin to lightly brown, 3 to 4 minutes, being careful as they burn easily. Add paprika and pepper. Pour in water and stir until mixture is smooth.

The soup has a slightly thickened broth that is very silky and just makes it even more comforting. A loaf of crusty bread is all that is needed to fill this meal out.

1 lb ham, cubed
1 medium onion, diced
2 cups carrots, sliced
1/2 cup celery, diced
5 medium potatoes, peeled and cubed
1 1/2 lbs fresh string beans, cut into 2 inch pieces
water or chicken stock
salt
pepper
4 tablespoons butter, softened
5 tablespoons flour

Steps:

  • Place the ham in large pot and fill pot about half way with either water or chicken stock, add onion, and celery and cover. Bring to a boil and turn down to simmer for about 30 minutes to an hour. (If ham is on the bone let it simmer for about 90 minutes or until the ham starts to fall off the bone before proceeding.).
  • Add carrots, potatoes, and string beans to pot and continue simmering for about 30 minutes. Salt and pepper to taste.
  • If using a ham bone remove ham from bone while the veggies are cooking and discard the bone.
  • When potatoes are done mix butter and flour to form paste, slowly add to pot to slightly thicken broth. (You don't want it gravy thick but to have a little body so more or less of the mixture might be needed depending on how much broth there is.).

4 cups fresh green beans, cut into 1-inch pieces
3 cups potatoes, peeled and cut into 1-inch cubes
2 cups ham, cubed, cooked
1 cup onion, chopped (1 large)
4 cups water
1 tablespoon cooking oil
1/4 cup all-purpose flour
1 tablespoon fresh dill, snipped or 1 teaspoon dried dill, crushed (I do not like dill so I added 1/2 tsp. basil and 1 bay leaf.)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup half-and-half or 1 cup light cream

Steps:

  • In a 4- or 6-quart pressure cooker combine green beans, potatoes, ham, onion, water, and oil. Lock lid in place. Place pressure regulator on vent pipe. Over high heat, bring cooker up to pressure.
  • Reduce heat just enough to maintain pressure and pressure regulator rocks gently; cook for 3 minutes.
  • Quick-release the pressure. Carefully remove the lid.
  • Stir together flour, dill, salt, black pepper, and milk, half-and-half, or light cream til smooth. Add to cooker. Cook over medium heat till thickened and bubbly.
  • Cook and stir for 1 minute more.

Soup:
4 cups drippings from pan of a baked ham.
1 ham bone, with some ham left on it.
9 cups water
2 medium red onions, chopped
3 carrots, peeled and julienned
2 cups raw coleslaw, (shredded cabbage)
2 sprigs fresh thyme
2 sprigs fresh savory
freshly ground pepper, to taste
2 potatoes, peeled and chopped into 1/2" cubes
1 two inch rind of a fresh parmesan cheese chunk
3 cups diced green beans
1 quart jar of canned tomatoes, pieces
Pistou:
3 large cloves garlic, mashed/pressed
2 heaping teaspoons of pesto sauce
1 tablespoon olive oil
1/2 cup finely grated parmesan cheese

Steps:

  • Simmer the Ham bone in the water for 2-3 hours, till its fragrant and the ham bits are falling off the bone. Remove the bone and when cool, remove all the ham from it , chop and put back in the broth. Add the rest of the ingredients for the soup and simmer till flavours blend and vegies are done. Pistou: Mix the garlic, pesto sauce, olive oil and parmesan well. Press into a small bowl and serve on the table with ladled soup, eveyone can take 1/2 - 1 teaspoon pistou per bowl, stir it in to allow the cheese to melt and the fresh garlic/pesto to incorprate into the soup, Enjoy!
