SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE

Something Different Green Bean and Corn Casserole image

Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

CORN AND GREEN BEAN CASSEROLE

This is my FAVORITE side for Thanksgiving meals, or to eat any time!!

Categories     Sides

Time 55m

Number Of Ingredients 8

1 can(s) white shoepeg corn
1 can(s) french cut green beans
1 small diced onion
1 c shredded cheddar cheese
1 can(s) cream of celery
1 c sour cream
1 pkg ritz crackers
1 stick butter

Steps:

  • 1. Preheat oven to 350 degrees. In medium size casserole dish add: corn, green beans, onion, cheese, cream of celery, and sour cream. Mix it all together until it is well incorperated. ***(Do drain the corn and green beans!)***
  • 2. Take one, unopened pack of ritz crackers and crumble it (while in pack). TIP: I drape a kitchen towel over it had pound it softly with my palm.
  • 3. Melt the stick of butter in a small sauce pan on the stove, OR melt butter in a microwave safe bowl in microwave. Once its melted completely, add the ritz cracker crumbles and stir until butter coats the crumbs.
  • 4. Pour the ritz cracker crumbs on top of the casserole until it is completely covered. Depending on the size of casserole dish, you may need to repeat step 2 and 3 to cover casserole completely.
  • 5. Place casserole in the oven and bake for 45 - 50 minutes. Once it is finished baking, allow it to rest about 15 minutes before serving. SCRUMPTIOUS aint the word!!! :)

Tips:

  • Use fresh or frozen green beans and corn. Fresh is always best, but frozen vegetables are a great option when fresh is not available. Just be sure to thaw them before using.
  • Cook the green beans and corn until they are tender but still have a little bit of a crunch. You don't want them to be mushy.
  • Use a combination of cream of mushroom soup, cream of celery soup, and milk for the sauce. This will give the casserole a rich and flavorful sauce.
  • Add some shredded cheddar cheese to the casserole. This will give it a cheesy, gooey texture that everyone will love.
  • Top the casserole with crushed Ritz crackers or cornbread crumbs before baking. This will give it a crispy topping that adds a nice contrast to the creamy sauce.
  • Bake the casserole until it is bubbly and hot. This usually takes about 30 minutes.
  • Serve the casserole immediately. It is best when it is hot and fresh out of the oven.

Conclusion:

Green bean and corn casserole is a classic comfort food that is perfect for any occasion. It is easy to make, delicious, and always a crowd-pleaser. So next time you are looking for a side dish that will make everyone happy, give green bean and corn casserole a try. You won't be disappointed!
