3 heads garlic, minced
1 tablespoon olive oil
salt and freshly ground pepper to taste
1 pound fresh green beans, trimmed
1 teaspoon butter
⅓ cup sliced almonds
1 tablespoon olive oil
1 pinch cayenne pepper, or more to taste
2 ounces crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.

  • Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7

Tips:

  • Choose fresh, crisp green beans. Look for beans that are bright green and snap easily when you bend them.
  • Trim the beans before cooking. Cut off the ends of the beans and remove any strings.
  • Blanch the beans before sautéing them. This will help them retain their bright green color and crisp texture.
  • Use a large skillet to sauté the beans. This will help prevent them from overcrowding and becoming soggy.
  • Sauté the beans over medium-high heat. This will help them cook quickly and evenly.
  • Add the almonds and butter towards the end of cooking. This will help prevent the almonds from burning and the butter from browning too much.
  • Season the beans with salt and pepper to taste.
  • Serve the beans immediately. They are best enjoyed hot and fresh.
