LOW-FAT GREEK YOGURT RANCH DIP
This Greek yogurt ranch dip is super quick and easy and low-fat or fat-free. Tailor it to your needs by choosing your favorite plain yogurt and dressing mix. The dip can be used as a dressing by tossing it into a salad, but I would not recommend watering it down for easier pouring, as this will seriously affect the flavor and consistency.

FRESH FRUIT WITH GREEK YOGURT DIP/DRESSING
This is great with all kinds of fruit (strawberries, blueberries, kiwi, bananas, grapes, canteloupe, apples, etc.). When one of my friends stayed with me during a visit, I came up with this for a quick breakfast before we headed out for the day. If I make it for just a few people, I serve it on the side so you have the option to dip your fruit or top it with as little or as much as you prefer. I make a big bowl of fresh fruit (8-10 cups of whatever is in season) along with this recipe. I have also served it for a family brunch and used this as a yogurt dressing for the fruit. I came back with no leftovers, and several requests for the recipe. This stuff is good!!!

Steps:
- Using tongs, cook eggplants one at a time over the flame of a gas burner (or a grill), turning as skin chars and bubbles, until completely soft, about 15 minutes. (If eggplant doesn't soften, finish cooking on a baking sheet in a 375-degree oven.) Let stand until cool enough to handle, about 15 minutes. Peel off charred skin and discard. Coarsely chop the eggplants, and place in a colander to drain, about 1 hour. Finely chop, and transfer to a bowl.
- Using a chef's knife, press flat side of blade back and forth across garlic and 1 1/2 teaspoons salt to make a paste. Mix into eggplant. Stir in oil. Mix in yogurt and lemon juice, and season with salt and pepper. (Dip can be refrigerated, for up to 1 day.) Drizzle with oil before serving.

Provided by Kare for Kitchen Treaty
Time 35m

Steps:
- Make the dip
- In a small bowl, blend together the yogurt, garlic, dill, lemon zest, lemon juice, salt, and pepper. Cover and refrigerate for at least an hour to allow the flavors to meld.
- Make the zucchini fries
- Heat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
- Prepare your ingredients: Place flour in a large Ziploc bag. Crack eggs into a shallow dish and whisk along with 2 tablespoons water. Mix Panko breadcrumbs, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
- Add zucchini to the Ziploc bag with flour and shake gently until all pieces are covered.
- Working with three or four sticks at a time, dip the zucchini sticks in the egg mixture then place in the Panko mixture, turning to coat. Gently lay on the baking sheet. Repeat, mixing the Panko breadcrumbs often to keep spices distributed, until all pieces are coated.
- Evenly drizzle olive oil on top of fries.
- Bake for 15 - 20 minutes until all sides are golden brown.
- Serve immediately with dip.
Tips:
- Use high-quality Greek yogurt: Opt for a thick and creamy Greek yogurt with at least 10% fat content for a rich and flavorful dip.
- Season to taste: Don't be afraid to adjust the seasonings to your liking. Add more lemon juice for a tangy kick, more garlic for a savory flavor, or more herbs for a fresh and aromatic dip.
- Chill before serving: Refrigerate the dip for at least 30 minutes, or up to overnight, to allow the flavors to meld and develop. This will result in a more cohesive and flavorful dip.
- Serve with a variety of accompaniments: Offer an assortment of dippers such as pita chips, vegetable crudités, crackers, or toasted baguette slices to complement the dip.
- Make it a meal: Turn the dip into a light meal by serving it as a sandwich spread, a topping for grilled chicken or fish, or as a dressing for a fresh and healthy salad.

With its creamy texture, tangy flavor, and versatility, the Greek yogurt dip is a delightful and versatile dish that can be enjoyed as a dip, a spread, or a dressing.
