Categories     side-dish

Time 15m

Yield 2 servings for lunch or 4 as a side

Number Of Ingredients 13

3 teaspoons red wine vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
8 large leaves red leaf lettuce, sliced crosswise
1/4 large red onion, thinly sliced
1/2 green bell pepper, cut into large dice
1 vine-ripened tomato, cut into wedges
1/2 English cucumber, halved lengthwise, cut into 1/2-inch pieces
6 Kalamata olives
2 ounces feta cheese, crumbled

Steps:

  • Combine the vinegar, lemon juice, oregano, and salt and pepper to taste in a small bowl and whisk together. Add the oil in a steady stream, whisking constantly.
  • Combine the lettuce, onion, bell pepper, tomato, cucumber, olives and feta in a large salad bowl. Pour the dressing over and toss until all of the ingredients are well coated. Taste and adjust the seasonings, adding more salt or lemon juice as desired.

Tips:

  • Use fresh and seasonal vegetables: The fresher the vegetables, the better your salad will taste. Look for vegetables that are brightly colored and have a crisp texture.
  • Cut your vegetables into uniform pieces: This will help them cook evenly and make your salad more visually appealing.
  • Don't overcook your vegetables: Vegetables should be cooked just until they are tender-crisp. Overcooked vegetables will be mushy and lose their flavor.
  • Use a variety of colors and textures: This will make your salad more interesting to eat. Try using a mix of leafy greens, crunchy vegetables, and soft vegetables.
  • Add some protein: Protein will help to make your salad more filling and satisfying. You can add grilled chicken, tofu, or beans.
  • Dress your salad with a flavorful dressing: The dressing is what will bring all the flavors of your salad together. Try using a vinaigrette, a creamy dressing, or a Greek yogurt dressing.

Conclusion:

Greek veggie salad is a healthy, refreshing, and flavorful dish that can be enjoyed as a main course or a side dish. It is a great way to get your daily dose of vegetables and is also a good source of protein and fiber. With its variety of colors, textures, and flavors, Greek veggie salad is a surefire crowd-pleaser.
