Greek Vegetable Dip for Zwt6 image

Found at www.cooks.com, entered for ZWT6 & modified slightly to make it more ingredient-friendly ... this low-cal & low-fat dip uses Feta cheese & combines it w/low-fat cottage cheese. Then it adds its veggie texture. I made the pimentos optional & then added capers as 2nd option (Times were estimated w/10 min allowed for ingredient prep & 10 min for combining them. Chill time is not included). *Enjoy* !

GREEK GODDESS DIP

Greek Goddess Dip image

This Greek goddess dip is stunningly verdant and has a bright herby flavor. The Greek strain in this dressing comes from using dill in place of watercress. Make it and watch it do a disappearing act on vegetables, pita chips or whatever conduit you can dream up.

Tips

- To make the dip creamier, use a food processor or blender until the desired consistency is reached. - For a smoother, richer dip, add a tablespoon of tahini or Greek yogurt. - Roast the vegetables for a more caramelized, smoky flavor. - If you want a spicier dip, add a pinch of cayenne pepper or red pepper flakes. - If you're using fresh herbs, add them at the end of the cooking process to preserve their flavor. - Serve the dip with warm pita bread, crackers, or vegetable crudités.
