Time 30m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds ground turkey
1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
  • Put the pitas on a baking sheet and place in the oven to warm.
  • Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.

Tips:

  • Use a combination of ground turkey and ground chicken. This will give the pitas a more complex flavor and texture.
  • Season the turkey and chicken generously. This will help to ensure that the pitas are flavorful throughout.
  • Don't overcook the turkey and chicken. They should be cooked through but still juicy.
  • Use a variety of vegetables in the pitas. This will add color, flavor, and nutrition.
