Time 30m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds ground turkey
1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
  • Put the pitas on a baking sheet and place in the oven to warm.
  • Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
  • Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

Time 55m

Number Of Ingredients 20

1 pound ground turkey
½ cup fresh spinach leaves (, chopped)
⅓ cup sun-dried tomatoes (, chopped)
1/4 cup red onion (, minced)
¼ cup feta cheese (, crumbled)
2 cloves garlic (, pressed or minced)
1 egg (, whisked)
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 soft whole-wheat hamburger buns
Bibb lettuce leaves
Sliced red onion
½ cucumber (, halved with skin and seeds removed)
3/4 cup low-fat plain Greek yogurt
2 cloves garlic (, pressed or minced)
1 tablespoon red wine vinegar
1 tablespoon fresh dill (, minced)
Pinch of kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil and dried oregano and kosher salt and freshly ground black pepper then pour over the turkey and mix with your hands to combine.
  • Divide the burger mixture into 4 portions and mold into patties. Place on a cutting board or plate dividing the patties with parchment paper and refrigerated for 30 minutes up to overnight. You could also individually freeze the patties at this point for up to 3 months.
  • Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
  • Heat a non-stick grill pan over medium heat and spray well with cooking spray.
  • Place the turkey burgers on the grill, cover with an upside down sheet pan or lid and cook for about 5 minutes per side. Be sure to watch the burgers and monitor your heat as the burgers will brown quickly if the heat is too high.
  • Slather buns with tzatziki sauce and garnish with lettuce leaves and red onion. Or serve bunless in the bibb lettuce leaves.

Categories     Poultry

Time 25m

Yield 4 burgers, 4 serving(s)

Number Of Ingredients 10

1 lb fat free ground turkey
4 ounces fat free feta cheese
4 ounces roasted red peppers, chopped
1 egg
1/2 teaspoon ground black pepper
1 teaspoon lemon juice
1/4 cup plain fat free Greek yogurt
4 whole wheat hamburger buns
1 cup Baby Spinach
1/2 cup cucumber, sliced

Steps:

  • 1. Warm a pan over medium heat and coat with cooking spray.
  • 2. In a bowl, combine first 5 ingredients and shape mixture into 4 patties. Place in pan, cover, and cook for 7 minutes. Uncover, flip, and cook for 5 more minutes.
  • 3. In another bowl, combine lemon juice with yogurt. Set aside.
  • 4. Serve burgers on rolls, topped with yogurt sauce, spinach, and cucumber.

Tips:

  • Use a flavorful ground turkey: Look for ground turkey made from dark and white meat for a more juicy and flavorful burger.
  • Add moisture: To ensure your burgers are moist and tender, incorporate moisture-rich ingredients like feta cheese, sun-dried tomatoes, or finely chopped vegetables.
  • Season generously: Don't shy away from using a variety of herbs, spices, and seasonings to pack your burgers with flavor.
  • Handle the meat gently: Overworking the meat can result in tough burgers. Mix the ingredients just until combined, and avoid over-kneading.
  • Use a burger press: If you have one, a burger press can help you form uniform and consistent patties that cook evenly.
  • Cook on a hot grill or skillet: Preheat your grill or skillet to high heat before cooking the burgers. This will help sear the outside and prevent the burgers from sticking.
  • Don't overcrowd the pan: When cooking multiple burgers, make sure to leave enough space between them so that they can cook evenly.
  • Cook to your desired doneness: Use a meat thermometer to check the internal temperature of your burgers. For juicy and tender burgers, aim for an internal temperature of 165°F (74°C).
  • Let the burgers rest: Once cooked, let the burgers rest for a few minutes before serving. This allows the juices to redistribute throughout the burger, resulting in a more tender and flavorful bite.

Conclusion:

With the right ingredients and techniques, you can create delicious and satisfying Greek turkey burgers that are perfect for summer grilling or a weeknight meal. Experiment with different flavor combinations and toppings to find your favorite variations. Whether you enjoy them on a bun, in a lettuce wrap, or simply on a plate, these burgers are sure to be a hit with everyone at the table.
