Time 1h40m

Yield 12

Number Of Ingredients 18

4 tomatoes
½ cup olive oil
2 tablespoons red wine vinegar
2 tablespoons white sugar
⅓ cup chopped fresh parsley
⅓ cup chopped fresh mint
⅓ cup chopped fresh basil
2 tablespoons fresh oregano
¼ cup capers
2 cloves garlic
salt and ground black pepper to taste
2 tablespoons olive oil
2 onions, sliced
2 potatoes, sliced
2 eggplant, sliced
3 zucchini, sliced
3 green bell peppers, sliced
2 cups okra

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place three of the tomatoes, the 1/2 cup olive oil, red wine vinegar, sugar, parsley, mint, basil, oregano, capers, and garlic in the bowl of a food processor and process to create a fresh tomato sauce. Season with salt and black pepper; set aside. Chop the remaining tomato; set aside.
  • Heat the 2 tablespoons olive oil in a skillet over medium heat, and cook and stir the onions until slightly golden, about 10 minutes.
  • Stir together the onions, potatoes, eggplant, zucchini, bell peppers, okra, the reserved chopped tomato, and the fresh tomato sauce, and place the mixture in a large baking pan. If needed, stir in a little water so that the vegetables are just covered with sauce.
  • Bake in the preheated oven until all vegetables are tender, about 1 hour.

SOUTZOUKAKIA (GREEK MEATBALLS IN A TOMATO SAUCE)

Soutzoukakia (Greek Meatballs in a Tomato Sauce) image

Lovely, delicately seasoned meatballs in a tomato sauce done in the style of the Greeks from Smyrna. This is a warming, hearty dish, great year round, but especially in winter.

Categories     One Dish Meal

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 20

2 slices thick dense bread (crusts removed)
1/2 cup dry red wine
1 lb ground lean meat (beef or veal)
1/2 cup finely chopped onion
2 garlic cloves, crushed
1 egg
2 tablespoons chopped parsley
2 tablespoons grated kefalograviera cheese (parmesan makes an excellent substitute) or 2 tablespoons mizithra cheese (parmesan makes an excellent substitute)
1/2 teaspoon oregano
1/2 teaspoon ground cumin
salt and pepper
flour (for dredging)
2 tablespoons olive oil
2 lbs fresh tomatoes
1 tablespoon vinegar
1 garlic clove, chopped
1 bay leaf
3/4 teaspoon sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Soak the bread in the wine for about 5 minutes, or until thoroughly softened.
  • Then, squeeze out and reserve the excess wine.
  • In a large bowl, combine the ground meat with the wine soaked bread, onion, garlic, egg, parsley, grated cheese, cumin, and salt and pepper to taste.
  • Mix the ingredients until thoroughly blended.
  • Cover and chill for 1 to 2 hours.
  • Dampen your hands, pinch off small portions of meat mixture, about the quantity of a teaspoon or just over, and shape into approximately 20 oval rolls (looks sort of like an elongated, slightly flattened, meatball).
  • Dredge them in flour.
  • Heat olive oil in a large frying pan.
  • Add the meatballs and fry until browned all over, turning occasionally and allowing time for the meat to cook thoroughly. (alternatively, if you want a 'lighter' recipe, you could just brown in a non-stick pan or bake them in the oven - not as flavourful, but still good).
  • Remove from the pan using a slotted spoon and set aside.
  • Strain the oil you fried the meatballs in through a fine sieve into a cooking pan.
  • Add all the sauce ingredients, and the reserved wine.
  • Bring to a boil and simmer until the sauce is thick.
  • Drop in the meatballs, stir to cover all over with the sauce, and simmer covered for 15 minutes.
  • Serve hot with rice, french fries, or mashed potatoes.

GREEK CHICKEN WITH TOMATO-FETA CHEESE SAUCE

Greek Chicken With Tomato-Feta Cheese Sauce image

You have to be a lover of feta cheese for this dish, this is a really easy chicken dish with lots of flavor. Leave the skin on the chicken for extra flavor on for this, and serve this over cooked noodles. This recipe can be doubled if desired. Serve this with my Greek salad #66596.

Tips:

  • Choose ripe, flavorful tomatoes. This is the key to making a great tomato sauce. If your tomatoes are bland, your sauce will be bland.
  • Use fresh herbs. Fresh herbs, such as basil, oregano, and thyme, add a lot of flavor to tomato sauce. If you don't have fresh herbs, you can use dried herbs, but use half the amount.
  • Don't overcrowd the pan. When you're cooking the tomatoes, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Simmer the sauce for a long time. The longer you simmer the sauce, the more time the flavors will develop. Aim for at least 30 minutes, but you can simmer it for up to an hour.
  • Taste the sauce as you go. Season the sauce with salt and pepper to taste. You may also want to add a pinch of sugar to balance out the acidity of the tomatoes.

Conclusion:

Greek tomato sauce is a versatile sauce that can be used in a variety of dishes. It's perfect for pasta, pizza, chicken, fish, and vegetables. It's also a great way to use up leftover tomatoes. So next time you have a bunch of ripe tomatoes, give this recipe a try. You won't be disappointed!
