Provided by á-153

Number Of Ingredients 9

3 lbs potatoes
1 cup chicken broth
2 tablespoons fresh lemon juice
1/4 cup butter, melted (no substitutes)
1 teaspoon oregano (or to taste)
1 tablespoon fresh minced garlic (optional or to taste)
salt and pepper
1/2-3/4 cup grated parmesan cheese (or to taste)
chopped fresh parsley

Steps:

  • Set oven to 375 degrees. Butter a shallow baking dish large enough to hold the potatoes. Peel and cut the potatoes into large wedges and place into the prepared baking dish. In a bowl combine the broth, lemon juice, butter, oregano, salt, pepper and minced garlic (if using); mix well to combine. Pour over potatoes in the dish and stir to coat well. Cover the dish tightly with foil. Bake for about 40 minutes. Uncover and turn potatoes. Sprinkle with Parmesan cheese, and return to oven (uncovered). Bake for another 20-30 minutes, or until potatoes are done to desired tenderness. Sprinkle with chopped fresh parsley and serve. *NOTE* the Parmesan may be sprinkled on just after baking if desired.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Bliss hold their shape better than starchy potatoes, making them ideal for roasting.
  • Cut the potatoes evenly: This will ensure they cook evenly. Aim for 1-inch cubes or wedges.
  • Toss the potatoes in oil and seasonings: This will help them crisp up and brown. Use a good quality olive oil and plenty of salt and pepper.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. Aim for 425°F (220°C).
  • Don't overcrowd the pan: This will prevent the potatoes from cooking evenly. If necessary, roast the potatoes in batches.
  • Roast the potatoes until they are golden brown: This should take about 20-30 minutes, depending on the size of the potatoes.
  • Serve the potatoes immediately: They are best enjoyed hot and crispy.

Conclusion:

Greek-style lemon roasted potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for a weeknight dinner or a special occasion. With their crispy exterior and tender interior, these potatoes are sure to be a hit with everyone at the table.
