Because our children are grown, I often cook for just my husband and me. When I want to serve something special, this is the entree I usually reach for. Seasonings, black olives and feta cheese give steak great flavor. -Ruby Williams, Bogalusa, Louisiana

OLIVE SPREAD
An easy and great tasting appetizer. You can not just have one.... You will have garlic breathe when you are finished, but it's worth it.

Steps:
- Put all ingredients, except olive oil in the food processor and pulse until chopped.
- Turn processor on low setting and gradually add olive oil until you get a grainy texture.
- I stop and start and scrape down the sides as I am going.
- I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
- Serve with slices of grainy baguette.
- This is wonderful and easy.
Tips:
- Use fresh feta cheese for the best flavor. If you can't find feta, you can substitute another type of soft, crumbly cheese, such as goat cheese or ricotta salata.
- If you don't have any fresh herbs on hand, you can use dried herbs instead. Just use half the amount of dried herbs as you would fresh herbs.
- This spread is also great as a dip for vegetables or pita chips.
- You can make this spread ahead of time and store it in the refrigerator for up to 3 days.
Conclusion:
This Greek-style feta and olive spread is a delicious and versatile condiment that can be used on burgers, steaks, fish, and vegetables. It's also great as a dip for pita chips or crackers. The spread is easy to make and can be made ahead of time, making it a perfect option for busy weeknights.
