Time 35m

Yield 4 servings

Number Of Ingredients 11

1/4 cup extra-virgin olive oil
1/2 cup thinly sliced red onion
1 cup thinly sliced fennel
3 cloves garlic, thinly sliced
Kosher salt and finely ground black pepper
2 tablespoons tomato paste
1 bunch Swiss chard leaves, sliced 3 inches wide
1 bunch collard greens, stemmed and sliced 3 inches wide
1 bunch lacinato kale, stemmed and sliced 3 inches wide
2 tablespoons finely chopped fresh dill
Juice of 1 lemon

Steps:

  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Place a heavy-bottomed enameled cast-iron pan over the direct heat side of the grill and add the olive oil.
  • Add the onions, fennel and garlic with a pinch of salt and allow to begin to soften, 2 to 3 minutes. Stir in the tomato paste and cook until rusty, 2 to 3 minutes.
  • Deglaze the pan with 1 cup water, scraping the bottom for any brown bits. Add all of the greens and season with salt and pepper.
  • Cover the pan with a lid.
  • Move the pan to the indirect-heat side of the grill, then close the lid and cook until the greens are wilted, 5 to 7 minutes. Remove from the grill and stir in the dill and lemon juice. Serve.

GREEK-STYLE DINNER PIE WITH LEFT-OVER GREENS

Number Of Ingredients 1

1 dash blah

Steps:

  • PREPARATION In a large heavy skillet over medium heat, heat 1 tablespoon oil. Add the onion and sauté until tender, about 5 minutes. Add a generous pinch of salt and the garlic, stirring until fragrant, about 30 seconds. If using raw greens, add, stirring until wilted, 2 to 4 minutes depending on which greens are used. If using cooked greens, add, stirring just until heated. Add parsley and dill, and season with salt and pepper to taste Heat oven to 375 degrees. Brush a 10-inch part or pie pan with oil. In a large bowl, beat the eggs until foamy. Add the feta and the greens mixture, and stir to combine. Spread a sheet of phyllo across the pan, so that the edges of it drape evenly over the pan. Gently fit the center of it into the base of the pan. Quickly and lightly, brush the phyllo with butter. Repeat with seven more sheets of phyllo, stacking them one on top of the other so that they form an asterisk pattern. Fill with the greens mixture, and fold the draped edges over to enclose the filling. Top with the remaining four sheets of phyllo, buttering each one, and again stacking in an asterisk pattern. Fold the edges under so that the dough extends about an inch beyond the rim of the pan, and then tuck the dough slightly into the pan, while rolling and twisting the edge under to shape a crust. Using a sharp knife, make several slashes through the top of the pie into the filling to allow steam to escape as the pie bakes. Bake the pie until the crust is crisp and golden brown, about 50 minutes. Serve hot, warm, or at room temperature. For a crispy crust, this is best served the same day baked.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 12

1 1/2 cups water
2 to 3 tablespoons brown sugar or honey (to taste)
1 teaspoon orange flower water (optional; available at Middle Eastern markets)
3 tablespoons chopped dried apricots
2 tablespoons currants or raisins
1 tablespoon unsalted butter (optional)
1 cup couscous
1/4 to 1/2 teaspoon cinnamon, to taste
1/4 teaspoon salt (optional)
2 navel oranges
6 dates, pitted and cut in quarters lengthwise
Pomegranate seeds for garnish

Steps:

  • Combine the water and brown sugar or honey in a saucepan, and bring to a boil. Turn the heat to medium, and boil gently until the sugar has dissolved. Stir in the optional orange flower water, the chopped apricots and the raisins or currants, and set aside for five minutes.
  • Place the couscous in a 2-quart bowl, and add the cinnamon and salt. Stir together. Pour on the hot syrup. Mix together with a fork, spatula or wooden spoon, and set aside for 20 minutes, stirring occasionally. At this point, if not eating right away, cover and refrigerate.
  • Shortly before serving, steam the couscous in one of two ways. Line a strainer with a double layer of cheesecloth, and dump the couscous into the strainer. Then set above a pot with 1 inch of boiling water. Cover and steam for 15 minutes, making sure that the water is well below the couscous. Transfer to a bowl, add the butter, and toss together until the butter melts. Alternatively, place the couscous in a microwave and cover tightly with plastic wrap. Microwave for two minutes. Carefully uncover, stir in the butter and cover again. Microwave for another two minutes. Remove the plastic, being careful of the steam in the bowl.
  • With a paring knife, peel away the skin and pith from the orange, holding it over the couscous so that any juice drips onto the couscous. Still holding the orange over the couscous, cut out the sections from between the membranes.
  • Pile the couscous into a mound on a platter, or spoon into individual serving bowls. Decorate with orange sections, date slices and pomegranate seeds, and serve.

If you are looking to feed a crowd, one way to meet the challenge is to pick up a supply of corn tortillas and make a big pot of beans and some other dishes that are at home in a taco. Buy some salsa, or make your own, and your house will be taco party central. You can make fillings in advance and arrange in bowls or on platters. Then all it takes is warming tortillas in a microwave, oven or steamer, and guests can assemble their own tacos. These beans are great in tacos, but can also be eaten on their own.

Time 2h

Yield 6 to 8 servings.

Number Of Ingredients 9

1 pound black beans, soaked for 4 to 6 hours or overnight in 2 quarts water
1 onion, chopped
4 garlic cloves, minced
Salt to taste
1 bunch cilantro, roughly chopped
1/2 pound Swiss chard, stemmed, washed and roughly chopped
12 to 16 corn tortillas
Fresh or bottled salsa
2 to 3 ounces queso fresco, crumbled

Steps:

  • Place the beans and their soaking water in a heavy soup pot or Dutch oven and bring to a boil. Skim away foam and add the onion and half the garlic. Reduce the heat, cover and simmer 1 hour. Add the remaining garlic, salt to taste and half the cilantro, cover and simmer for 45 minutes.
  • Add the Swiss chard, cover and simmer 10 minutes. The chard should be tender but still have some bright color. Stir in the remaining cilantro, taste and adjust salt.
  • Warm the tortillas. Top with a generous spoonful of beans with chard, a spoonful of crumbled queso fresco, and salsa if desired.

Tips:

  • Choose the right greens: For the best flavor and texture, use a variety of greens, such as spinach, kale, collard greens, or Swiss chard. Make sure to wash them thoroughly before using.
  • Don't overcook the greens: Overcooked greens will be tough and bitter. Cook them just until they are wilted and tender, about 5 minutes.
  • Use a good quality feta cheese: Feta cheese is a key ingredient in this dish, so it's important to use a good quality cheese. Look for a feta that is creamy and flavorful.
  • Don't be afraid to experiment: You can add other ingredients to this dish, such as cooked chicken or ground beef, diced tomatoes, or chopped olives. Get creative and make it your own!

Conclusion:

This Greek-style dinner pie is a delicious and easy way to use up leftover greens. It's perfect for a weeknight meal, and it's also a great way to get your kids to eat their vegetables. Serve it with a side of salad or soup, and you have a complete and satisfying meal.
