1 large cucumber
16 ounces plain Greek yogurt (non-fat is fine)
¼ cup chopped fresh dill
1 tablespoon fresh lemon juice
1 teaspoon salt

Steps:

  • Peel, grate, and drain cucumber. I drain my grated cucumber by placing it in a wire mesh strainer over a bowl. Use the back of a large spoon to push the water out of the cucumber until you can no longer squeeze any more liquid out.
  • In a medium bowl, combine drained, grated cucumber with yogurt.
  • Stir in dill, lemon juice, and salt. Mix well.
  • Allow dip to sit in refrigerator for a few hours before serving.

1 English hothouse cucumber, unpeeled, halved lengthwise, seeded, grated

1 cucumber - peeled, seeded, and grated

2 c plain greek youghurt or lebni
1 english cucumber unpeeled halved lenthwise seeded and grated
1 Tbsp coarse sea salt
1/2 c sour cream
2 Tbsp lemon juice, fresh
2 Tbsp dill, fresh minced fine
1 clove garlic minced
6 pita bread cut into wedges
olive oil, extra virgin

Steps:

  • 1. Mix cucumber and 1 tablespoon salt in small bowl, cover and chill 3 hours
  • 2. Add greek yogurt to another bowl. Mix in sour cream, lemon juice, dill and garlic.
  • 3. Squueze out as much of the liquid from the cucumber that you can. Stir cucumber into youghurt. Season with pepper. Cover and chill at least 2 hours ( can be made a day ahead)
  • 4. Preheat over to 400 degrees, place pita wedges on a baking sheet brush with olive oil and bake until crisp about 10 minutes. Let cool. ( Can also be made a day ahead) Store Pita in airtight contain at room tempeture. Serve with Tzaziki.
