Time 25m

Yield 12 waffles

Number Of Ingredients 9

450 g frozen spinach, thawed
1 onion
1 tablespoon olive oil
70 g butter
100 g grated cheese (your favourite kind)
4 eggs
100 ml milk
200 g flour
1/2 teaspoon baking powder

Steps:

  • Cut the onion into small pieces. Saute in olive oil until soft. Then add the spinach. Season generously with salt and pepper (the spinach absorbs a lot of flavour). Cook until the spinach is done.
  • In a big bowl combine butter, cheese, eggs, milk, flour and baking powder. Carefully fold in the spinach and onion.
  • Bake portions of the dough in a well heated and lightly greased waffle iron until crisp and golden brown.
  • Serve with garlic yogurt or topping of your choice.

Tips:

  • Prep the Ingredients: Before you start cooking, measure and prep all the ingredients to ensure smooth and efficient cooking.
  • Use Quality Cheese: Opt for high-quality feta cheese for the best flavor and texture. Crumble it finely to distribute it evenly throughout the waffles.
  • Season Wisely: Don't shy away from adding herbs and spices to enhance the flavors. Freshly chopped dill, oregano, and garlic powder complement the spinach and cheese well.
  • Don't Overmix the Batter: Overmixing can result in tough, dense waffles. Combine the wet and dry ingredients separately and mix just until combined.
  • Cook in a Hot Waffle Iron: Preheat your waffle iron to the desired setting before pouring the batter. This ensures even cooking and crispy waffles.
  • Be Patient: Cooking waffles takes time, so be patient and let them cook thoroughly. Avoid opening the waffle iron repeatedly, as this can disrupt the cooking process.

Conclusion:

Indulge in the delightful combination of flavors and textures with these Greek-style cheese and spinach waffles. They are a perfect balance of savory and tangy, with a crispy exterior and a fluffy, tender interior. Serve them with your favorite toppings, such as Greek yogurt, honey, or fresh fruit, for a complete and satisfying meal. Experiment with different cheeses and herbs to create your own unique flavor combinations. Whether you're looking for a tasty brunch option or a flavorful dinner, these waffles are sure to impress. So, gather your ingredients, preheat your waffle iron, and embark on a culinary journey to Greece!
