This dish is based off the Greek chicken my friend Kim taught me. I modified it to use the 6-quart slow cooker in the summer instead of the oven.

1 (3 pound) whole chicken, skin removed
1 lemon, cut in half
6 cloves peeled garlic, or more to taste (divided)
6 red potatoes, sliced into 1-inch thick rounds
1 large onion, roughly chopped
¼ cup white wine
¼ cup olive oil
1 teaspoon chicken bouillon granules
¼ cup boiling water
2 teaspoons dried oregano
salt and pepper to taste

Steps:

  • Rinse the chicken, inside and out. Place one half of the lemon and 3 garlic cloves in cavity of chicken. Reserve other half of lemon.
  • Layer the sliced potatoes and the onions in the crock of a slow cooker. Sprinkle remaining 3 garlic cloves around the inside of the cooker; place chicken onto the vegetables. Pour in the wine and olive oil. Dissolve bouillon in the boiling water, and add to the cooker.
  • Squeeze the juice of remaining lemon half over chicken (strain out seeds); sprinkle with oregano. Season chicken with salt and black pepper.
  • Cover, and cook on Low setting for 8-10 hours, or on High setting 4-6 hours. A meat thermometer, inserted into the thickest part of a thigh, not touching a bone, should read at least 160 degrees F (70 degrees C).

4 pita pocket breads
1/2 cup plain yogurt
1 tomato, sliced
1/2 cup cucumber, chopped
1 medium red bell pepper, sliced in thin strips

Steps:

  • In a slow cooker, combine onion, garlic, chicken, lemon pepper, oregano, and allspice. Mix to coat chicken with seasonings. Cover and cook on LOW for 4 to 6 hours. Heat pita bread as directed on package. Meanwhile, remove chicken from slow cooker to cutting board. Using two forks, shred chicken. To serve, stir yogurt into onion mixture in slow cooker. 6 bone-in chicken thighs (from two 1.5-lb packages), skin removed
1 teaspoon ground cinnamon
1/2 teaspoon salt

2 cloves garlic, finely chopped
2 cans (14 1/2 oz each) diced tomatoes, undrained
1/3 cup tomato paste
2 teaspoons grated lemon peel
1/2 teaspoon dried oregano leaves
1/4 cup chopped parsley

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. Place carrots and onions in slow cooker. Top with chicken thighs. Sprinkle with cinnamon, salt, pepper and garlic; top with tomatoes. 1 lb chicken thigh (boneless skinless, about 4-6 thighs)
1 (14 ounce) can diced tomatoes
1 cup fat free chicken broth
1/2 cup fat free Greek yogurt, plain
1 head cauliflower, chopped
1 fennel bulb, sliced
1 (10 ounce) can artichoke hearts, drained
1 red onion, sliced
1/3 cup kalamata olive, drained (not in oil)
1/4 cup fresh oregano, finely chopped
8 garlic cloves, minced
2 teaspoons fresh lemon zest
1 teaspoon salt
1/2 teaspoon black pepper
crushed red pepper flakes, to taste

Steps:

  • Spray a large nonstick skillet with non-fat cooking spray and set at medium high heat. Add the chicken and cook, turning once, until browned, about 5-8 minutes.
