Time 40m

Yield 4

Number Of Ingredients 9

5 large tomatoes
1 small red onion, thinly sliced
sea salt to taste
1 ½ teaspoons dried oregano
1 (4 ounce) container crumbled feta cheese
½ cucumber, sliced
1 small green bell pepper, sliced
¼ cup Greek black olives
3 tablespoons extra-virgin olive oil

Steps:

  • Cut your tomatoes into wedges over the bowl that you're serving the salad in, so that any extra juices land in the bowl. Add onion slices. Liberally season with salt and oregano. Mix and allow tomatoes to sit at room temperature for at least 30 minutes, up to 2 hours, so that the salt releases the tomatoes' juices.
  • Mix in feta cheese, cucumber, bell pepper, and olives just before serving. Stir everything together. Drizzle with olive oil.

GREEK SALAD (HORIATIKI SALATA)

Greek Salad (Horiatiki Salata) image

On the menu in every Greek restaurant and many non-Greek restaurants as well, this salad has many individual variations, but here are the basics to work from. This is the traditional version that does not include lettuce. This is the way they made it in the Greek restaurant I worked in. They claimed this is the most traditional. All I know is that it is fresh and delicious!

GREEK SALAD

Greek Salad image

While diner-style Greek salads made with chopped romaine, crumbled feta and often grilled chicken have become ubiquitous in American restaurants, a traditional Greek salad, or horiatiki salata, is a simpler affair. An assembled salad of large-diced vegetables with Kalamata olives and sometimes capers, this salad has no greens at all, and the feta is served sliced on top of the salad rather than crumbled and tossed into it. A traditional Greek salad is dressed lightly with olive oil and red wine vinegar; this recipe adds garlic and oregano. To make the salad into a satisfying vegetarian main course, throw in a can of drained and rinsed chickpeas.

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 13

2 tablespoons red wine vinegar
1 small garlic clove, grated or finely minced
1/4 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup olive oil
1 pound ripe red tomatoes, cored and cut into wedges (2 or 3 tomatoes)
1 English cucumber, halved lengthwise and sliced 1/2-inch thick
1 green bell pepper, cored, halved lengthwise and sliced 1/4-inch thick
3/4 cup Kalamata olives
1 tablespoon capers, drained
1/2 medium yellow or red onion, very thinly sliced into rings
8 ounces Greek feta cheese, sliced 1/2-inch thick

Steps:

  • In a bowl or small glass measuring cup, whisk together the vinegar, garlic, oregano, salt and pepper. Gradually whisk in the olive oil, then set aside.
  • Arrange the tomatoes, cucumber and bell pepper in a large shallow serving bowl. Scatter the olives, capers and onions on top, then drizzle about half the dressing evenly over the salad.
  • Place the slices of feta on top of the salad and drizzle with additional dressing to taste. Serve at room temperature.

Tips:

  • Use ripe, fresh vegetables: The quality of your vegetables will make a big difference in the taste of your salad. Look for ripe, firm tomatoes, cucumbers, and onions.
  • Cut your vegetables evenly: This will help them cook evenly and make your salad look more appealing.
  • Don't overdress your salad: A little bit of dressing goes a long way. Too much dressing can overwhelm the other flavors in the salad.
  • Serve your salad immediately: Greek salad is best when served fresh. If you need to make it ahead of time, store the dressing and vegetables separately and assemble the salad just before serving.

Conclusion:

Greek salad is a delicious, healthy, and refreshing dish that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. With its bright flavors and crunchy texture, Greek salad is a surefire crowd-pleaser. So next time you are looking for a quick and easy meal, try making a Greek salad. You won't be disappointed!
