This recipe is a slight variation of a wonderful summer dish invented by Sarah Leah Chase in her book The Open House Cookbook.

1 small eggplant, peeled and 3/4-inch diced
1 red bell pepper, 1-inch diced
1 yellow bell pepper, 1-inch diced
1 red onion, peeled and 1-inch diced
2 garlic cloves, minced
1/3 cup good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 pound orzo or rice-shaped pasta
1/3 cup freshly squeezed lemon juice (2 lemons)
1/3 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 scallions, minced (white and green parts)
1/4 cup pignolis (pine nuts), toasted
3/4 pound good feta, 1/2-inch diced (not crumbled)
15 fresh basil leaves, cut into julienne

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the eggplant, bell peppers, onion, and garlic with the olive oil, salt, and pepper on a large sheet pan. Roast for 40 minutes, until browned, turning once with a spatula.
  • Meanwhile, cook the orzo in boiling salted water for 7 to 9 minutes, until tender. Drain and transfer to a large serving bowl. Add the roasted vegetables to the pasta, scraping all the liquid and seasonings from the roasting pan into the pasta bowl.
  • For the dressing, combine the lemon juice, olive oil, salt, and pepper and pour on the pasta and vegetables. Let cool to room temperature, then add the scallions, pignolis, feta, and basil. Check the seasonings, and serve at room temperature.

350 g pumpkin, peeled, deseeded & cut into 2cm pieces
1 red onion, cut into wedges
1 red capsicum, cubed
2 medium zucchini, halved & thickly sliced
1 garlic clove, crushed
1/4 cup olive oil
250 g risoni pasta
2 tablespoons lemon juice
100 g feta cheese, crumbled
2 tablespoons pine nuts, toasted

Steps:

  • Preheat oven to 200.C/180.C Fan forced.
  • Line a large baking tray with baking paper.
  • Place pumpkin, onion, capsicum, zucchini, garlic and 1 tblsp oil in a bowl and toss to coat, season with salt & pepper.
  • Place on prepared tray and roast 30 mins or until tender.
  • Meanwhile cook risoni in a large pan of boiling salted water according to packet directions, drain and return to pan to keep warm.
  • Add lemon juice, feta, roasted vegetables and remaining oil to risoni, toss gently to combine and serve topped with pine nuts.

1 lb / 500g chicken thighs (, boneless skinless (or breast), cut into2cm / 4/5" pieces)
2 garlic cloves (, minced)
1 tbsp dried oregano
1 lemon - zest of the whole lemon and juice of HALF the lemon
1 tbsp olive oil
Salt and pepper
2 tbsp olive oil
2 garlic cloves (, minced)
1 small onion (, diced)
2 zucchinis (, diced)
1 red bell pepper/capsicum (, sliced)
1 tbsp dried oregano
2 1/2 cups chicken broth
14 oz / 400g canned crushed tomatoes
2 tbsp tomato paste
1 cup orzo/risoni
1 punnet cherry tomatoes
Salt and pepper
Crumbled feta cheese
Fresh oregano leaves

Steps:

  • Combine Marinated Chicken ingredients in a bowl and set aside for marinate for 20 minutes.
  • Preheat oven to 180C/350F.
  • Heat 1 tbsp olive oil in a large, deep skillet or dutch oven over high heat.
  • Cook chicken until lightly browned but still pink inside. Remove from skillet.
  • Turn heat down to medium high.
  • Add 1 tbsp olive oil, garlic and onion. Saute for 1 minute, then add zucchini and bell peppers/capsicum. Cook for 2 minutes.
  • Add oregano, chicken broth, canned tomato and tomato paste. Add salt and pepper to taste.
  • Mix, then add orzo / risoni. Mix, then top with chicken.
  • Bring to a simmer, scatter over cherry tomatoes then transfer to the oven.
  • Bake for 15 to 20 minutes, until orzo/risoni is just cooked - tender but still firm. (Note 1)
  • Remove from oven, drizzle with juice of remaining 1/2 lemon. Garnish with feta and fresh oregano leaves, if desired, then serve.

4 large scallions, trimmed and thinly sliced
2 large garlic cloves, minced
8 ounces baby spinach leaves (8 cups), coarsely chopped
1 teaspoon kosher salt
1 3/4 cups low-sodium chicken or vegetable stock
1 cup orzo
1 teaspoon finely grated lemon zest (from 1 lemon)
3/4 cup crumbled feta (3 ounces), plus more for garnish
1/2 cup frozen peas, thawed (optional)
1 cup chopped fresh dill, or use parsley or cilantro

Steps:

  • Heat a 10-inch skillet over medium, then melt butter, 30 seconds to 1 minute. Stir in about three-quarters of the scallions (saving some of the green parts for garnish) and garlic, and cook until softened, stirring frequently, about 3 minutes.
  • Stir in spinach, adding in batches if it doesn't all fit in the pan at once, and 1/2 teaspoon salt. Continue to cook, stirring occasionally, until spinach is wilted, about 5 minutes.
  • Stir in stock and bring to a simmer. Stir in orzo, lemon zest and remaining 1/2 teaspoon salt. Cover and simmer over medium-low heat until orzo is nearly cooked through and most of the liquid is absorbed, 10 to 14 minutes, stirring once or twice.
  • Stir in cheese, peas (if you like) and dill, cover the pan, and cook for another 1 minute, to finish cooking and warm the peas. To serve, sprinkle with more cheese and the reserved scallions.
