- Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter a 9-by-13-inch baking dish.
- Bring a large pot of salted water to a boil over high heat. Cook the noodles until tender but still firm to the bite, stirring occasionally, 7 to 9 minutes. Drain and transfer to a large bowl.
- Heat the oil over medium-high heat in a large skillet. Add the onion, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally until soft, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the lamb, cumin, coriander, cinnamon, allspice, 1 teaspoon salt and the remaining 1/4 teaspoon pepper. Cook, stirring frequently, until cooked through, about 6 minutes. Add the tomato sauce and mint. Bring the mixture to a boil. Reduce the heat and simmer for 5 minutes.
- For the sauce: Simmer the milk and cream over medium heat in a medium heavy-bottomed saucepan. Reduce the heat to low. Add the cheese and whisk until the cheese is melted and the sauce is smooth. Remove the pan from the heat and stir in the yogurt.

- Add the olive oil to a large sauté pan over medium-high heat. Once hot, add the ground beer and lamb and cook for 5-6 minutes, or just until you do not see any more pink.
- Add the onion and garlic and continue to cook until the onions are soft and the garlic is very fragrant, about 4-5 minutes. Salt and pepper generously.
- Pour the white wine into the sauté pan and stir. Allow the wine to reduce by at least half before adding the tomato puree, oregano, 1 teaspoon cinnamon, 1 teaspoon nutmeg, and allspice.
- Bring the sauce to a simmer and allow to simmer for 20-30 minutes or until the sauce is quick thick. Set aside.
- While the tomato sauce is simmering, bring your water for the pasta in a stock pot to a boil. Cook the pasta as per the directions on the packaging except cut back the time by 1-2 minutes so that you don't end up with super mushy noodles in the end.
- While the pasta is cooking begin preparing the béchamel sauce by melting the butter in a large sauté pan. Once melted, slowly add the flour, whisking continuously to fully incorporate the fat and flour to make a roux. Continuing whisking for 2-3 minutes to cook out the raw flour taste.
- Slowly add the milk to the roux, again whisking continuously.
- Add the 1/2 teaspoon of nutmeg and allspice to the béchamel and let cook for 5 minutes. Remove from the heat.
- Place the egg yolks in a small bowl, and, while mixing them continuously, slowly add a tablespoon of the béchamel to the yolks at a time. Do this 4 or 5 times to temper the eggs. Then add the egg mixture to the béchamel and whisk to combine fully. Set aside. Note: DO NOT dump the yolks directly into the hot béchamel sauce without tempering them first or else you will end up with scrambled eggs.
- Preheat your oven to 375 degrees F.
- Once the pasta is cooked, strain it. Place 1/2 cup of butter in the empty stock pot and, once melted, add the ziti along with the egg whites. Toss to combine but be careful not to break the noodles.
- To assemble the pastitsio, in a 13 by 9 pyrex baking dish, apply a layer of cooking spray so that the food does not adhere to the dish. Then, spread the ziti across the bottom of the dish, being sure to evenly distribute the noodles. Then, place the tomato sauce on the ziti. Top the tomato sauce with the béchamel, making sure that the entire dish is covered. Sprinkle the freshly grated parmesan cheese on top and place in the over, uncovered, for 45 minutes or until the cheese and béchamel sauce start to brown slightly. Allow to rest for 5-10 minutes.
- Serve by cutting square or rectangular pieces (just as if you were serving lasagna).

- In a large saucepan, saute onions in butter until opaque. Crumble beef into saucepan and brown.well. Drain off the fat.
- Add salt, pepper, tomato sauce, water and sugar. Stir well and simmer 35-40 minutes. At this point there should be very little water in the sauce.
- Remove from heat and cool. The meat sauce can be made ahead of time.
- In a saucepan, melt butter and then add in the flour, stiring constantly using a wire whisk. Gradually add the warm milk, stirring vigorously until sauce thickens. Add nutmeg, remove from heat and cool.
- When ready to use meat sauce, add half of the bread crumbs and 1 1/4 cups parmesan cheese. Stir well and set aside. Preheat oven to 350 degrees F.
- Cook the macaroni per package directions in boiling salted water until almost al dente. Drain well, stir in the olive oil and set aside.
- Butter an 11x17 inch baking pan and sprinkle with 2 tbsp bread crumbs. Spread half of the macaroni across the baking pan and sprinkle 1/2 cup cheese over top.
- Beat the eggs in a bowl using a wire whisk and add in 1/2 cup of the cooled bechamel sauce. Stir well and then add egg mixture into the rest of the bechamel sauce. Add the cheese and stir well.
- Cover macaroni layer with meat sauce. Pour half of the bechamel sauce over the meat and cover with remaining macaroni. Sprinkle 1/2 cup cheese over macaroni layer.
- Top macaroni layer with remaining bechamel sauce and top with remaining bread crumbs and cheese.
- Cook in the oven on a center rack for 50 minutes or until golden brown. Let sit 20 minutes to firm up before cutting and serving.
- This casserole freezes well and is easy to reheat. Place the frozen pastitsio, covered loosely with foil, in a 350 degree oven for 1 1/2 hours to 2 hours or until heated through.

MY BIG FAT GREEK PASTITSIO
This is real comfort food! I love this meaty, rich casserole. I must warn you - you will probably end up with very messy kitchen after making this, but it is worth it. Named in honor of the movie "My Big Fat Greek Wedding" which celebrates Greek culture. I have been making this homestyle Greek recipe for many years, but it originally came from one of my favorite military community cookbooks, "Enough to Feed an Army." Prep time allows for cooking the macaroni and chopping the onions & garlic.

- In a nonstick skillet sprayed with nonstick spray, saute the onion over medium-high heat until translucent, 2-3 minutes or so.
- Add meat to the pan and cook over medium heat until browned all the way through; drain fat.
- Add tomato sauce, garlic,just 1 tsp of the cinnamon, and some salt to taste.
- Simmer on low heat 20 minutes.
- Meanwhile, in a medium saucepan, melt the butter.
- Once the butter has melted, stir in the flour, whisking until blended.
- Remove pan from heat and whisk in the milk slowly until blended.
- Return pan to heat and let simmer over low heat about 5 minutes, stirring often,or until thick and smooth.
- Remove sauce from heat and let cool slightly.
- In a bowl, beat eggs and then add small portion of the cream sauce, whisking quickly as you do.
- Whisk in a bit more of the sauce, then add all the rest and whisk well until smooth.
- (You can to be careful not to add too much at first or you will cook the eggs.) Season sauce with some salt& pepper and a dash of nutmeg to taste, mixing well.
- Grease a 9x13" casserole with deep sides well and place hot macaroni in it.
- Top with meat sauce, then sprinkle meat sauce with remaining 1 tsp cinnamon.
- Pour cream sauce over all to cover.
- You may need to shake the pan a little to make everything settle in (not too hard- you don't want sauce flying everywhere).
- You may have a little extra cream sauce left over, depending on how deep your pan is.
- Bake in a preheated 350 F oven for approximately 40 minutes or until custard is firm (no jiggling).
- Let cool 10 minutes before serving.

- In a large pot, bring water and salt to a rapid boil; add macaroni.
- Stir a few times with a fork; boil macaroni until al dente according to package directions (7-9 minutes).
- Drain macaroni well and return to pot.
- Mix oregano, garlic powder and flour into melted butter.
- Stir butter into pasta, cover, and keep warm.
- Beat eggs until frothy.

- 1. Saute onion in large skillet in butter till soft. Stir in ground beef till lightly browned season with salt, cinnamon & oregano. Stir in tomato puree, garlic & parsley. Cover & simmer gently for 20 minutes. Cook macaroni al dente; add a little salt.
- 2. Melt butter in pan and blend in flour (use a whisk to blend well).
- 3. Stir in milk & cook stirring constantly to make a thin white sauce. Beat egg yolks lightly in another dish. Dip out 1 cup of the sauce and pour it in a thin stream & stirring constantly into the yolk mixture until well blended. Pour mixture back into the rest of the sauce and stir for a few minutes over medium heat till it thickens. Add your nutmeg, salt and pepper.
- 4. Grease 9x13 casserole dish and then put in a thin layer of macaroni.
- 5. Next, layer with the meat sauce. Finish with layer of macaroni.
- 6. Pour the creamy sauce over all of it. Jiggle the pan so the sauce runs through all the layers and then sprinkle with the top with parmesan cheese.
- 7. Bake at 350 degrees for 45 minutes. Put foil over the top if it starts to get to brown. Remove from oven and let it sit for 15 to 20 minutes before cutting and serving. Enjoy.

- 1. Saute onion in butter or olive oil in large heavy pan or skillet until soft. Stir in beef and cook until lightly brown.Season with salt, pepper, cinnamon, and oregano. Stir in tomato puree and parsley. Cover and simmer gently for 20 minutes. Taste and add more salt if necessary. Cook macaroni in large kettle of well salted boiling water until tender but still slightly firm. Drain, then rinse in lukewarm water. Mix cooking oil well through macaroni to prevent it from sticking together.
- 2. CREAMY TOPPING----Melt butter and blend in flour. Stir in milk and cook about 5 minutes, stirring constantly to make a thin white sauce. Dip out 1 cup of hot sauce and pour thin stream into yolks, stirring constantly until well- blended. Pour mixture back into rest of sauce and stir for a few minutes over low heat. Do not allow to boil. Season with nutmeg, salt, and pepper.
- 3. In greased 9x13 pyrex casserole, put a thin layer of macaroni, a layer of meat sauce, a second layer of macaroni, and a second layer of meat sauce. Pour creamy topping over all. Jiggle the dish so that some sauce runs through all layers. Sprinkle Parmesan over the top. Bake at 350 degrees for 45 minutes. Remove from oven and let stand 15-20 minutes. Cut into large squares and serve from pan.

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a large pot cook the pasta in boiling water with 1 tablespoons salt until al dente; drain and return the cooked pasta to the pot.
- To the pasta add in 1/4 cup melted butter, 1/3 cup Parmesan cheese, pinch nutmeg, 1/2 teaspoon salt and 1 teaspoon ground black pepper; mix until combined then allow to cool slightly.
- Add in eggs and mix well; set aside.
- For the meat sauce; heat olive oil and butter in a skillet over medium heat; add in onion and crushed chili flakes, cook for about 4 minutes.
- Add in garlic and cook for 2 minutes.
- Add in extra lean ground beef; cook breaking up the meat with a spoon or fork until browned.
- Add in tomato paste, wine, beef broth, salt and pepper; mix well, then cover and simmer over low heat for about 45-50 minutes, stirring occasionally.
- Meanwhile while the meat sauce is cooking prepare the bechamel sauce; melt butter in a heavy saucepan over medium heat; stir in flour and cayenne pepper; cook stirring for about 2 minutes.
- Add in cream and nutmeg; bring to a boil whisking/stirring constantly then cook for about 1 minute.
- Cool for about 10 minutes before whisking in the egg.
- Season with salt and black pepper.
- Remove about 1/2 cup bechamel sauce and mix into to the already cooked ground beef mixture.
- Preheat oven to 350 degrees F.
- TO ASSEMBLE; spoon HALF of the ziti mixture into the bottom of the baking dish.
- Top the ziti mixture with ALL of the meat sauce, then top with remaining ziti mixture.
- Pour ALL the bechamel sauce over the ziti mixture then spread out with a spoon to cover.
- Top with about 1 cup grated Parmesan cheese (can use more or less).

GREEK PASTITSIO WITH LENTILS

- Cook the macaroni in enough boiling water to cover for about 10 minutes, and drain. Cool under cold running water and reserve.
- Cook the lentils in 4 cups boiling water for about 25 minutes or until tender. Drain.
- Preheat oven to 350 degrees.
- In a large skillet heat the oil. When hot, add the onion, and saute for 2 minutes. Add the wine, and simmer for 10 minutes or until the wine has evaporated and the onion is tender. Add the cinnamon, tomato sauce and lentils; simmer for 3 to 4 minutes.
- In a medium-size saucepan heat the milk. Whisk in the oat bran and nutmeg, and simmer for 1 minute, stirring constantly; remove from the heat. Stir the macaroni into the milk mixture, and mix well.
- Spoon half the macaroni mixture onto the bottom of a 9-inch-square baking pan. Spoon half the lentil mixture on top, spreading evenly. Repeat with the remaining macaroni and lentils. Sprinkle on the cheese. Cover with foil, and bake for 15 minutes or until the pastitsio is hot.

This is one of my favorite recipes, not only because it's so good, but it only serves 2-3 people, depending on your appetite. My hubby doesn't eat leftovers so I get to eat whatever is left the next day.

- 1. Cook pasta; drain and return to pan. Stir in 4-1/2 tsp melted butter, 8 tsp parmesan cheese, 1/2 beaten egg. Reserve other half of beaten egg for later. Set aside.
- 2. Cook ground beef and chopped onion in skillet until meat loses its pinkness and the onion softens. Drain excess fat from pan.
- 3. Stir in tomato sauce, salt, mint flakes if using, cinnamon, nutmeg, and pepper. Set aside. (The recipe calls for 1/2 can of tomato sauce but I always use a whole can.)
- 4. Melt 2 T butter in a saucepan. Then mix in flour and 1/4 tsp salt. Slowly stir in milk, stirring well after each addition so no lumps form. Cook and stir on medium high until cream sauce starts to thicken. Stir for one more minute; then remove from heat.
- 5. Pour other half of beaten egg into cream sauce, stirring briskly. Blend in remaining parmesan cheese.
- 6. Layer half the pasta in a 2 quart baking dish. Spoon meat mixture over the top, then the remaining pasta. Pour cream sauce over the top to completely cover the pasta.
- 7. Bake, uncovered, at 350 degrees for about 40 minutes, or until hot and lightly browned. Let stand 10 minutes before serving.
GREEK PENNE PASTITSIO

- Preheat oven to 400. Coat a 9 x 13 inch baking dish with non-stick spray.
- For the casserole, cook penne in a pot of boiling salted water, 2 minutes less than package directions, drain.
- Heat oil in a skillet over medium high. Add onions and cook until softened, 3 minutes. Add lamb, olives, pepperoncini, garlic, tomato paste, oregano, thyme, cinnamon, and some red pepper flakes; cook, breaking up chunks of lamb with a wooden spoon, until cooked through; about 5 minutes.
- Deglaze skillet with wine; cook until evaporated, 2 minutes. Stir in crushed tomatoes, bring sauce to a boil, reduce heat to medium-low, and simmer 10 minutes. Season sauce with salt and black pepper, stir in penne, then transfer to prepared dish.
- For the béchamel, melt butter in a saucepan over medium heat. Stir in flour and garlic; cook 2 minutes. Gradually whisk in milk, then add cloves; simmer until thickened; 5 minutes.

Steps:
- MEAT SAUCE
- Saute Onions in Oil and add Minced Meat
- Add the rest of the ingredients and simmer on low for 45 minute.
- Remove Cinnamon Sticks.
- BECHAMEL SAUCE.
- Heat Oil, add Flour, stir and cook for 2 minutes.
- Add Milk very gradually stirring all the time.
- Remove from heat.
- Cool a little and add eggs.
- Then add Mitzithra and Nutmeg.
- Place ½ the Macaroni into a dish and salt a little.
- Add Minced Meat and then the rest of Macaroni.
- Pour Bechamel Sauce on top.
- Sprinkle with Mitzithra.
- Bake at 180C for 45 minuits.
