Steps:
- Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
- Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

Tips:
- Choose ripe and firm peppers for roasting. Look for peppers that are free of blemishes and have a deep, vibrant color.
- To easily remove the skins from the roasted peppers, place them in a paper bag and let them steam for 10-15 minutes. The skins will then peel off easily.
- For a smoky flavor, roast the peppers over an open flame or on a grill.
- To make the marinade, use a good quality olive oil and red wine vinegar. You can also add herbs and spices to the marinade, such as oregano, thyme, rosemary, or garlic.
- Marinate the peppers for at least 30 minutes, or up to overnight, to allow the flavors to meld.
- When roasting the peppers, keep an eye on them to prevent them from burning.
- Serve the roasted peppers warm or at room temperature. They can be enjoyed on their own, or as a side dish with grilled meats, fish, or poultry.
Conclusion:
Greek marinated roasted peppers, olives, and feta cheese are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. The roasted peppers are smoky and flavorful, the olives are briny and salty, and the feta cheese is creamy and tangy. Together, these ingredients create a dish that is both satisfying and refreshing. Whether you are looking for a quick and easy weeknight meal or a dish to impress your guests, Greek marinated roasted peppers, olives, and feta cheese are sure to please.
