Time 30m

Number Of Ingredients 10

1 teaspoon dried oregano
½ teaspoon ground pepper
4 chicken breast cutlets (about 1 pound)
1 tablespoon extra-virgin olive oil
¼ cup refrigerated basil pesto
4 whole-grain sandwich thins
2 cups loosely packed baby arugula
4 jarred roasted red pepper strips, drained and patted dry
5 ounces fresh mozzarella cheese, sliced
Cooking spray

Steps:

  • Combine oregano and pepper in a small bowl. Sprinkle evenly over both sides of chicken. Heat oil in a large skillet over medium-high heat. Add the chicken; cook until golden and cooked through, about 3 minutes per side. Remove from the pan. When cool enough to handle, slice each cutlet in half crosswise.
  • Spread pesto evenly over cut sides of sandwich thins. Top the bottom halves evenly with arugula, chicken, roasted red pepper and mozzarella; cover with top halves. Press down lightly.
  • Lightly coat an unheated panini griddle, covered indoor electric grill or large nonstick skillet with cooking spray. Lightly coat both sides of sandwiches with cooking spray. Heat the griddle or grill according to the manufacturer's directions. (If using a skillet, heat over medium heat.) Place the sandwiches on the griddle or grill or in the skillet, working in batches if necessary. If using a griddle or grill, close the lid and grill until the bread is toasted, 3 to 4 minutes. (If using a skillet, place a heavy saucepan or skillet on top of the sandwiches. Cook until the bottoms are toasted, about 2 minutes. Flip the sandwiches; top again with the saucepan or skillet. Cook until the other side is toasted, about 2 more minutes.)

CHICKEN, PESTO, AND OLIVE PANINI

Chicken, Pesto, and Olive Panini image

Excellent blend of flavors. You don't need a panini press or Foreman Grill to make these delicious sandwiches.

Provided by Vicki in CT

Categories     Lunch/Snacks

Time 10m

Yield 2 sandwiches, 2 serving(s)

Number Of Ingredients 9

2 pieces flat bread (I use Toufayan brand)
1/2 teaspoon olive oil
2 tablespoons pesto sauce (I used Pesto or can use store bought pesto)
1/2 cup kalamata olive, pitted and coarsely chopped
1/2 tomatoes, seeded and coarsely chopped
10 leaves Baby Spinach
6 ounces fresh mozzarella cheese, sliced
1/2 cooked chicken breast, sliced (I used leftover grilled chicken)
salt

Steps:

  • On bottom of both bread pieces brush on olive oil.
  • Spread one tablespoon of pesto (or more if you like) on each piece of bread on the top side. So the bottom will have olive oil and the top will have pesto.
  • On the the pesto side on ONE HALF of bread place spinach leaves. Repeat with other bread.
  • On top of spinach place 1/4 of mozzarella. Repeat with other bread.
  • Layer on chicken, olives, tomatoes and 1/4 of mozzarella. Repeat on other bread to make two complete sandwiches. Fold in half with the olive oil side on the outside.
  • Grill on panini press or Foreman Grill.
  • If you don't have these (as I don't) heat grill pan to medium heat. Wash two bricks and cover with foil. Place sandwiches side by side on grill pan. Place foil covered bricks on top. Cook on medium for 4-6 minutes. Turn over and replace bricks. Cook an additional 4-6 minutes until cheese is melted and bread is toasted brown.

Tips:

  • Choose flavorful ingredients: The quality of your ingredients will greatly impact the taste of your Greek-marinated chicken panini. Use fresh, flavorful chicken breasts, ripe tomatoes, crisp cucumbers, and creamy feta cheese.
  • Marinate the chicken overnight: This will allow the flavors of the marinade to penetrate the chicken and make it extra juicy and flavorful.
  • Cook the chicken over medium heat: This will help to prevent the chicken from drying out.
  • Toast the bread: Toasting the bread will give the panini a nice crispy texture.
  • Spread pesto on both sides of the bread: This will add a delicious layer of flavor to the sandwich.
  • Add plenty of toppings: Don't be afraid to load up your panini with toppings like tomatoes, cucumbers, feta cheese, and red onion.
  • Serve the panini immediately: This is when it will be at its best, with the bread still crispy and the cheese melted and gooey.

Conclusion:

The Greek-marinated chicken panini with pesto is a delicious and easy-to-make sandwich that is perfect for a quick lunch or dinner. The marinated chicken is flavorful and juicy, the pesto adds a delicious layer of flavor, and the toppings are fresh and crisp. This sandwich is sure to be a hit with everyone who tries it.
