GREEK LEMON CHICKEN WITH POTATOES

Greek Lemon Chicken With Potatoes image

Lemony-herbal chicken that roasts painlessly...oven-roasted garlicky potatoes - crisp on the outside, butter-soft on the inside. This recipe never receives anything but raves!

Provided by evelynathens

Categories     Whole Chicken

Time 2h20m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 large chicken
1 lemon, juice of
3/4 tablespoon dried oregano (if you can get the Greek stuff, you're really cooking!)
3/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
5 -6 large potatoes, peeled and cut into big wedges (probably 1/4s)
1 lemon, juice of
1/2 cup olive oil
1/2 cup water
1/2 teaspoon salt
3/4 tablespoon dried oregano
1/4 teaspoon pepper
2 -3 minced garlic cloves

Steps:

  • (I often add about 1 tsp of crumbled, dried rosemary to the potatoes and 1/2 a teaspoon to the chicken- this is fantastic and it then becomes oregano-rosemary-lemon-garlic chicken).
  • Wash the chicken well and pat dry.
  • Combine all the remaining ingredients and massage the chicken, inside and out, with this mixture. Put the chicken in a big bowl and put in the fridge while you prepare the potatoes.
  • Put the potatoes and all remaining ingredients into a large baking pan. Wash your hands and put them in the pan and toss the potatoes around to coat with other ingredients.
  • Put in the oven and crank up the heat to 250°C (480F).
  • Start roasting the potatoes and when they're golden-brown, stir them to bring the white sides up and push to the side of the pan to make room in the middle for the chicken.
  • If all the water has evaporated, and potatoes have started to stick to pan, add 1/2 cup more.
  • Add the chicken, breast-side down, and pour any juices that have accumulated in bowl over.
  • Return to very hot oven and roast until chicken is golden-brown.
  • Turn over, breast-side up and continue roasting until chicken is nearly as golden-brown on other side.
  • At this point, I turn the oven off- don't open it- and leave the chicken in for another 1/2 an hour. I like to think I'm saving energy this way, but it also cooks the chicken beautifully.
  • In all, I'd say from when you put the potatoes into the cold oven to when you remove the chicken to carve after sitting in off oven for 1/2 an hour, we're talking 2 hours.
  • Serve with pan juices.

GREEK LEMON ROASTED POTATOES, MARTHA STEWART

Greek Lemon Roasted Potatoes, Martha Stewart image

This is a fantastic and different way to roast potatoes. It's great with grilled or roasted chicken and was featured in Martha Stewart Living with trout. From Martha's magazine: "Oregano is Greek for "joy of the mountain." Greek oregano has a more mild flavor than the Mexican variety usually found in the spice aisle of your supermarket. Look for Greek oregano at Italian or Greek markets." (Or you can order it from www.penzeys.com, a wonderful herb and spice shop.) Enjoy!

GREEK-STYLE LEMON POTATOES

Greek-Style Lemon Potatoes image

Lemon, fresh oregano, and feta to brighten up potatoes-leave skin on or off. Serve alongside grilled fish, steak, or chicken with a tomato salad. Leftovers would be good, too. TY Just Jan for helping me improve this recipe. :)

Yield 4 serving(s)

Number Of Ingredients 10

4 large red potatoes, scrubbed and cut into 1/2 inch cubes
1/4 cup lemon juice
1 tablespoon olive oil
1 tablespoon oregano leaves, chopped
1 tablespoon lemon basil, chopped (optional)
2 teaspoons lemon zest
1 teaspoon salt
3 garlic cloves, minced
1 cup chicken broth, boiling
2/3 cup feta cheese, crumbled

Steps:

  • Preheat oven to 450°.
  • Remember to BOIL the chicken broth.
  • Spray a 9- by 13-in. baking dish with cooking spray.
  • In a large bowl, toss potato cubes with lemon juice, olive oil, oregano, lemon zest, salt, and garlic; layer slices in baking dish.
  • Pour 1 cup BOILING chicken broth over potatoes and bake, uncovered, until most of the broth has evaporated and potatoes are tender, about 30 minutes.
  • Top with feta and bake until golden, about 15 minutes more.

Tips:

  • Choose the right potatoes: Yukon Gold or baby potatoes are best for this recipe, as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Parboil the potatoes: This step helps to remove some of the starch from the potatoes, which makes them less likely to stick together.
  • Use a large skillet: This will give the potatoes plenty of room to brown.
  • Do not overcrowd the skillet: Otherwise, the potatoes will not cook evenly.
  • Cook the potatoes over medium heat: This will help them to brown evenly without burning.
  • Season the potatoes generously: Salt, pepper, and garlic powder are all good choices.
  • Add the lemon and herbs towards the end of cooking: This will help to preserve their flavor.

Conclusion:

Greek Lemon Potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy on the outside, fluffy on the inside, and bursting with flavor. The lemon and herbs add a bright and refreshing touch, making them the perfect accompaniment to grilled meats or fish. This recipe is also very versatile, so you can easily customize it to your liking. For example, you can add other vegetables, such as zucchini or bell peppers, or you can use different herbs, such as rosemary or thyme. No matter how you make them, Greek Lemon Potatoes are sure to be a hit!
