Lamb Meatballs
1 pound ground lamb
3 tablespoons red onion, finely chopped
1 small garlic clove, minced or crushed in a garlic press
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 teaspoon cumin
1 tablespoon mayonnaise
1 cup fresh mint (loosely packed and finely chopped)
3/4 teaspoon kosher salt
2 tablespoons canola oil
1 fresh lemon for squeezing and garnish, cut into quarters
Optional: 1/8 teaspoon cayenne pepper
Tzatziki Sauce
1 large cucumber
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon kosher salt
1 tablespoon fresh mint, finely chopped
1/4 cup fresh dill, finely chopped
2 cups Greek yogurt

Steps:

  • In the bowl with the lamb, add red onion, garlic, egg, bread crumbs, cumin, mayonnaise, fresh mint, and salt. Using your hands, mix thoroughly to distribute the ingredients evenly. With a teaspoon, form the mixture into 24 meatballs. Don't level the meat off or pack the meatballs too tightly.
  • Preheat the broiler.
  • Lightly spread canola oil on a baking sheet using a paper towel. Place the meatballs two inches apart on the baking sheet, and position the baking sheet 4 inches from the heat source.
  • Broil for about 5 minutes, turning once halfway through.
  • Arrange the meatballs on a serving platter, and squeeze fresh lemon juice over the top. Sprinkle the cayenne pepper over the meatballs at the last minute. Serve at once with tzatziki.
  • Place cucumber, olive oil, lemon juice, lemon zest, salt, mint, and dill in a bowl and mix well. Add the Greek yogurt and mix well.
  • Cover with plastic wrap or place in an airtight container, and chill in the refrigerator for at least 2 to 3 hours before serving.

LAMB SLIDERS WITH TZATZIKI

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 19

1 large beet
1 teaspoon sugar
1 tablespoon butter
3 cloves garlic
2 tablespoons red wine vinegar
1 cucumber, peeled and seeded
1 cup Greek yogurt
1 tablespoon chopped fresh dill
Lemon juice, as needed
Salt and ground white pepper
1 pound ground lamb
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh oregano
1/4 cup feta
1/2 teaspoon ground cumin
1/2 Spanish onion, diced
1/2 jalapeno, seeded and finely diced
Salt and freshly ground black pepper
4 to 6 mini potato buns, for serving

Steps:

  • For the tzatziki: Cook the beet in boiling water until soft. When cool enough to handle, peel and add to a blender. Puree with the sugar and butter.
  • Put the garlic and vinegar in a blender and blend until smooth. Shred the cucumber on a box grater. Put the cucumber shreds in a towel, squeeze to remove all the liquid and put in a bowl. Add the yogurt, garlic and vinegar mixture, chopped dill, and season with lemon juice, salt, and white pepper. Add enough beet puree until you reach a color you like.
  • For the sliders: Place a grill pan over medium heat or preheat a gas or charcoal grill.
  • Thoroughly mix together the lamb, mint, oregano, feta, cumin, onions, jalapeno, salt and black pepper. Form into 4 to 6 patties. Grill to desired temperature, place on a bun, and top with the tzatziki.

Tips:

  • Use fresh, high-quality lamb. This will make a big difference in the flavor of your meatballs.
  • Don't overwork the meat. Overworking the meat will make the meatballs tough.
  • Use a light touch when forming the meatballs. Don't pack them too tightly, or they will be dry.
  • Cook the meatballs over medium heat. This will help them cook evenly without burning.
  • Make the tzatziki sauce ahead of time. This will give the flavors time to meld together.
  • Serve the meatballs warm, with the tzatziki sauce and your favorite toppings.

Conclusion:

These Greek lamb meatball sliders with tzatziki are a delicious and easy-to-make appetizer or main course. They are perfect for a party or a weeknight dinner. The meatballs are juicy and flavorful, and the tzatziki sauce is cool and refreshing. Serve them on slider buns with your favorite toppings, and you'll have a meal that everyone will love.
