  • Paint with marinade.
  • Broil to desired doneness, turning occasionally and painting with marinade, 9 minutes for medium rare, 12 minutes for medium to medium well.

Tips:

  • Use high-quality lamb: Look for lamb that is fresh and free of any gamey odor. You can also ask your butcher to recommend a good cut of lamb for brochettes.
  • Marinate the lamb: Marinating the lamb in a flavorful marinade will help to tenderize the meat and infuse it with flavor. You can use a variety of marinades, but a simple combination of olive oil, lemon juice, garlic, and herbs is always a good choice.
  • Skewer the lamb tightly: When skewering the lamb, make sure to pack the meat tightly onto the skewers. This will help to prevent the meat from falling off the skewers while cooking.
  • Cook the lamb over medium-high heat: Lamb brochettes should be cooked over medium-high heat so that the meat cooks quickly and evenly. You can cook the brochettes on a grill, in a grill pan, or under a broiler.
  • Serve the lamb brochettes immediately: Lamb brochettes are best served immediately after they are cooked. You can serve them with a variety of sides, such as rice, roasted vegetables, or a simple salad.
