3 tablespoons olive oil
1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach, rinsed and chopped
½ cup chopped fresh parsley
2 eggs, lightly beaten
½ cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
¼ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
  • In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. 1 cup green onion, chopped
15 oz fresh spinach
4 cloves garlic, chopped
1 cup feta cheese
½ cup ricotta cheese
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
1 teaspoon salt
1 teaspoon pepper
8 sheets phyllo dough

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large pan over medium heat, cook the green onions and garlic in the olive oil until soft.
  • Add half the spinach, giving time for some to cook down before adding the rest.
  • Once the spinach has cooked down, transfer to a medium mixing bowl to cool slightly.
  • Add the feta, ricotta, egg, dill, parsley, salt and pepper, and mix until evenly spread.

3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

(3)packages frozen 16 oz. Bags cut leaf spinach
1- 8 oz package Philadelphia Cream Cheese
1 lb. Crumbled Feta cheese
3 medium onions(cut lengthwise)
6 sprigs of fresh dill (Remove stems and chop fine)
3 tbsps. Olive oil
1 package of fillo pastry sheets(can be found in the freezer section of any supermarket)
4 oz. Melted butter
1 egg(optional)

Steps:

  • Preheat oven to 400 degrees. Heat olive oil slightly in a dutch oven over medium heat. Saute onions in olive oil until lightly browned. Add dill. Use low heat, and then add spinach. Cover dutch oven and let spinach thaw over low heat. Once spinach is thawed, remove dutch oven from heat and add Philadelphia Cream Cheese, feta, egg. Mix thoroughly with wooden spoon. If mixture appears too wet, add ½ cup bread crumbs to absorb excess liquid. In a 13" x 9" cookie sheet, brush bottom of pan with pastry brush. Add (1)layer of fillo. With pastry brush, brush fillo with melted butter. Add another sheet of fillo and repeat process until there are at least 6 layers of fillo. Add spinach mixture and pat evenly. Add layer of fillo. Brush with melted butter. Repeat this process until there are at least 6 layers of fillo. Cut even squares all the way through. Then cut triangles. Bake Spinach Pie for approximately 45 minutes or until fillo is browned.

1 (16 ounce) package of prepared phyllo dough, thawed
1 (15 ounce) bag frozen spinach, thawed and drained
195 g feta cheese
350 g cottage cheese
190 g cream cheese
2 eggs
1 white onion, chopped
1 bunch fresh dill, chopped
1 cup butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Drain spinach, using a paper towel squeeze all moisture out.
  • Saute onion in a bit of olive oil until golden brown.
  • Drain cottage cheese.
  • Chop up or crumble cheeses.
  • In a large bowl mix cheeses, spinach, onion, eggs and dill. Set aside.
  • Remove half the phyllo from the package. Cover with damp cloth. Lay one sheet of dough in a 9X13 baking dish, brush with melted butter. Repeat until the half of the dough has been used. Pour on the spinach/cheese mixture and level with spatula. Top with remaining half of the phyllo dough, brushing each sheet with butter.
  • Bake for 20 minutes or until golden brown and 'puffy'.
  • Cut and serve. This is for main course, you can also do in small triangles of dough for an appetizer, but that's too much work for me!
