5 large tomatoes
1 small red onion, thinly sliced
sea salt to taste
1 ½ teaspoons dried oregano
1 (4 ounce) container crumbled feta cheese
½ cucumber, sliced
1 small green bell pepper, sliced
¼ cup Greek black olives
3 tablespoons extra-virgin olive oil

Steps:

  • Cut your tomatoes into wedges over the bowl that you're serving the salad in, so that any extra juices land in the bowl. Add onion slices. Liberally season with salt and oregano. Mix and allow tomatoes to sit at room temperature for at least 30 minutes, up to 2 hours, so that the salt releases the tomatoes' juices.
  • Mix in feta cheese, cucumber, bell pepper, and olives just before serving. Stir everything together. Drizzle with olive oil.

4 -5 tomatoes (Large,ripe)
1 large red onion
1 cucumber
1 green bell pepper
1/4 lb Greek feta cheese (, sliced or cumbled)
1/4 teaspoon dried greek oregano (rigani)
1/8 teaspoon sea salt
1/4 cup top quality extra virgin olive oil
1 dozen Greek olive (Kalamata, green Cretan olives, etc.)
1 tablespoon water (optional)

Steps:

  • Preparation:.
  • Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry.
  • Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Salt lightly. Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings, removing the stem and seeds. Salt lightly. Slice the onion into thin rings.
  • Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad, either as a slice or crumbled (as in photo), and toss in some olives. Sprinkle the cheese with oregano (and pepper if desired), mix the oil and water and drizzle over the top, and serve, garnished with hot peppers.

2-3 med. ripe and juicy tomatoes, cut in wedges
1 med. sweet banana pepper, or, half of a green bell pepper, sliced in ribbons
1 sm. English cucumber, or, 2 Persian cucumbers, peeled and cut in "coins"
¼-½ sm. red or mild white onion, thinly sliced
12 whole Kalamata olives
1 tsp. small capers (optional)
5 oz. Greek Feta cheese
1-2 med. pepperoncini (optional)
½ tsp. Greek dry oregano
VINAIGRETTE
½ cup extra olive oil
¼ cup red wine vinegar
½ tsp. dried Greek oregano
1 tsp. sea salt

Steps:

  • Place all vegetables in a large bowl and gently combine.
  • Add the olives and capers and place the chunk of Feta cheese in the center. (Do not cut in pieces). Add the pepperoncini, if using. Sprinkle with the oregano.
  • For the vinaigrette, place everything in a glass jar and shake well to incorporate all the ingredients. Pour about half of the vinaigrette over the salad. Reserve the rest or adjust if needed. Do not be afraid to coat the salad really well with the simple vinaigrette.

1 large ripe tomato, cut into wedges then halved
1 medium cucumber, cut in 1/2 inch half-moons
1/4 c red onion, thinly sliced
1/2 small green bell pepper, thinly sliced
8 kalamata olives, whole
2 oz feta cheese, cut in 2 thick slices
1 Tbsp red wine vinegar
2 Tbsp extra virgin olive oil
dried greek oregano
salt and freshly ground pepper, to taste

Steps:

  • 1. Combine the tomato, cucumber, red onion and green pepper in a bowl. Add the red wine vinegar and toss gently to combine.
  • 2. Add the olive oil, salt and pepper, to taste, then toss gently until incorporated. Add the Kalamata olives. Sprinkle the salad with a little oregano.
  • 3. Divide the salad between two shallow bowls. Place a piece of feta on top of each and sprinkle the feta with oregano and another drizzle of olive oil. Season to taste with salt and pepper, if needed.
  • 4. Note: Most often we don't plate this individually, and everyone just uses their forks to help themselves. We also take thick crusty bread and dip it in the oil & vinegar dressing that goes to the bottom of the bowl.
