Steps:
- Preheat oven to 425 degrees F (220 degrees C). Lightly oil a large roasting pan.
- Place chicken pieces in large bowl. Season with salt, oregano, pepper, rosemary, and cayenne pepper. Add fresh lemon juice, olive oil, and garlic. Place potatoes in bowl with the chicken; stir together until chicken and potatoes are evenly coated with marinade.
- Transfer chicken pieces, skin side up, to prepared roasting pan, reserving marinade. Distribute potato pieces among chicken thighs. Drizzle with 2/3 cup chicken broth. Spoon remainder of marinade over chicken and potatoes.
- Place in preheated oven. Bake in the preheated oven for 20 minutes. Toss chicken and potatoes, keeping chicken skin side up; continue baking until chicken is browned and cooked through, about 25 minutes more. Tips:
- Choose the right chicken: Use boneless, skinless chicken breasts or thighs for best results.
- Marinate the chicken: Marinating the chicken in a mixture of olive oil, lemon juice, honey, oregano, and garlic for at least 30 minutes helps tenderize and infuse the chicken with flavor.
- Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet helps distribute heat evenly and prevent the chicken from sticking.
- Cook the chicken over medium-high heat: This will help create a nice sear on the outside and cook the chicken through without drying it out.
- Reduce the sauce: Once the chicken is cooked, reduce the sauce by simmering it for a few minutes until it has thickened. This will intensify the flavor.
- Serve with your favorite sides: Rice, potatoes, or roasted vegetables are all great options.
Conclusion:
Greek honey lemon chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and flavorful, and the sauce is tangy and sweet. With a few simple ingredients and a little bit of time, you can create a restaurant-quality meal at home.
