2 large garlic cloves, minced
1 pound fresh green beans, trimmed
3/4 pound yellow squash (3 medium squash), sliced
1 (14-ounce) can chopped tomatoes, or 1 1/2 cups peeled, chopped tomatoes
Salt and freshly ground pepper to taste
1/4 cup chopped fresh mint, parsley or dill
1 to 2 tablespoons fresh lemon juice (optional)

Steps:

  • Heat 2 tablespoons of the olive oil in a wide, covered skillet or Dutch oven over medium heat, and add the onion. Cook, stirring, until tender and translucent, five to eight minutes. Add the garlic and cook, stirring, for another minute until fragrant. Stir in the green beans, squash and remaining oil. Stir together for a few minutes, then add the tomatoes and 1/2 cup water. 1 large onion, chopped
2 large potatoes, peeled and cut into 3/4 inch chunks
1/2 cup water
2 medium zucchini, sliced lengthwise & into 1/2 inch chunks
1 lb green beans, thawed if frozen,fresh is better
1 3/4 lbs fresh tomatoes
1/2 teaspoon dried oregano
1 bunch chopped fresh dill or 1 bunch fresh parsley
salt & freshly ground black pepper
1/2 lb feta cheese

  • Heat the oil in a large soup pot or steep-sided stir-fry pan.

600 g lamb, diced
1 large red onion, chopped
1 kg fresh green beans, washed and trimmed
680 g passata (pureed tomato pasta sauce)
180 ml water
salt
fresh ground black pepper
1/8 cup mint leaf, chopped roughly

Steps:

  • Heat the oil in a large frying pan over a medium high heat.
  • Add the diced lamb and cook until the meat is browned.
  • Stir in the trimmed beans and onion. Cook for approx 10 minutes, stirring occassionally.
  • Stir in the passata sauce, water, salt and pepper to taste and the chopped mint.
  • Reduce the heat to low. Cover and simmer for 3/4 hour to one hour -- until the meat is cooked through and the beans are tender.

1 tablespoon garlic powder
1 tablespoon dried oregano
Kosher salt and freshly ground pepper
1 1/4 pounds green beans, trimmed
1 pint cherry tomatoes
3 cloves garlic, smashed
2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling
2 tablespoons red wine vinegar
1/4 cup chopped fresh dill
1/2 cup crumbled feta cheese (2 to 3 ounces)

Steps:

  • Cover one side of a grill with a large sheet of foil; fold up the edges to make a rimmed tray. Preheat the grill to medium high. Rub the chicken all over with the garlic powder and oregano; season generously with salt and pepper. Toss the green beans, tomatoes, garlic and olive oil in a large bowl; season with 1/2 teaspoon salt and a few grinds of pepper.
  • Brush the grill grates with olive oil on the side without the foil tray. Place the chicken on the grates and grill, turning halfway through, until marked and cooked through, about 15 minutes. Serves 4 of us (but we like it a lot, lol) more like 6-8. Easily doubled. Time is a guess--start to finish is maybe 20-25 minutes.

29 ounces canned green beans, drained or 1 (16 ounce) package frozen green beans, cooked per pkg
1 (14 1/2 ounce) can of diced Italian tomatoes
1/2 teaspoon olive oil
1/2 cup fine chopped red onions or 1/2 cup any onion
1/2 teaspoon oregano
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1/2 teaspoon minced garlic
1/4 cup crumbled feta cheese (or more)

Steps:

  • Cook your green beans fresh or frozen. If using canned skip this.
  • Heat the olive oil in a sauce pan, add the onions.
  • Cook until soft about 5 minutes on low.
  • Add everything but feta. If using canned green beans add now.
  • Simmer on low until hot.

  • I've done this in the oven in a casserole dish, and in a foil packet on the grill. You're basically just heating everything through.

1 medium onion, diced
2 clove garlic, chopped
1 pinch red pepper flakes
28 oz can tomatoes, diced or 4 cups diced fresh tomatoes
1 lb green beans, trimmed and cut into bite size pieces
1/2 tsp oregano, dried
kosher salt and freshly ground pepper to taste
1 handful parsley, chopped
1 handful dill or fresh mint, chopped
1/2 c feta cheese, crumbled

Steps:

  • 1. Heat oil in a large saucepan over medium heat. Add onions and saute until tender, about 5-7 minutes.
  • 2. Add garlic and pepper flakes and saute until fragrant, about a minute.
  • 3. Add tomatoes, green beans, oregano; salt and pepper and simmer until the beans are soft; about 40 minutes.
  • 4. Remove from heat, mix in dill and parsley and serve garnished with feta cheese.

1 lb green beans (thin,tender ones are best)
1 medium yellow onion, chopped finely
3 -4 tablespoons olive oil
3 -4 medium tomatoes

Steps:

  • Wash and string the beans, but leave them whole.
  • In a large, deep skillet, heat olive oil until hot.
  • Add the onion and saute for about 5 minutes until it is tender, but not brown.
  • Add the green beans.
  • Cover the skillet.
  • Cook for about 15 minutes or until the beans start to wilt.
  • Coarsely chop two of the tomatoes (ONLY TWO).
  • Add to the pan and cover again.
  • Cook for another 15-20 minutes until the tomatoes have melted into a sauce.
  • Taste and add salt and pepper as needed.
  • If necessary add another one or two chopped tomatoes and continue cooking.
  • You may need to add extra olive oil also as it contributes to the flavor.

  • Serve hot, cold, or at room temperature (the way Greeks do).
  • If you can find good, creamy feta, crumble a good chunk into the beans before serving.
