SIMPLE GREEK HOME FRIES IN A QUICKNESS

Simple Greek Home Fries in a Quickness image

We make breakfast for our Saturday staff and students and I was requested to make a large batch of Greek home fries. In a hurry after work on Friday, I decided to experiment. These are now the Saturday potatoes side for the breakfasts at school. I also have to make additional amounts as DH and DS said "not fair" if we do not get any. LOL Enjoy! I reduced amounts for a family of 4-6 not the 30 I need to make for Saturdays. adjust seasonings to taste.

Categories     Potato

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 10

4 medium potatoes (I like red)
1 medium onion, chopped small
3 tablespoons olive oil
1 garlic clove (diced)
1 teaspoon oregano
1 teaspoon pepper
1 teaspoon basil (I use fresh so chop into small pieces)
1 tablespoon lemon juice (I use more to taste as I love the freshness)
3 teaspoons butter or 3 teaspoons margarine
1/2 teaspoon kosher salt

Steps:

  • Wash and pierce potatoes and microwave 10 min (varies depending n power of microwave) until you can push a dent in to potatoes.
  • Let cool.
  • Slice in quarters then slice into 1/2 inch pieces.
  • In the meantime add oil, garlic, pepper, oregano and diced onions in a large fry pan (big enough to hold potatoes).
  • Sauté until just cooked, when onions turn translucent (about 3 minutes).
  • Once potatoes are cut, add to fry pan, add butter and basil and cook over medium heat, stirring so potatoes can pick up all the juices and flavors.
  • Turn to low, cover and let cook for an additional 10 minutes (approx) until potatoes get the crispy brown edges. mmmmm.
  • Add lemon juice and mix.
  • Serve.
  • Note: times are approximately depending on microwave and stove type. I have propane so it cooks hot.
  • ** Add in more or less spices to your liking. I need to adjust for students. With my family, I add in more garlic and lemon and no salt.
  • ***Prep and cook times overlap- this is on the table at my home in less than 30 minutes start to finish.

AIR FRYER LOADED GREEK FRIES

Air Fryer Loaded Greek Fries image

Air-fried french fries loaded with Greek flavors. These are great on their own but also pair nicely with lamb, steak, or chicken. Cheese is a must for loaded fries but since feta doesn't melt, I incorporated it into the tzatziki sauce.

Spicy Baked Zucchini Fries with Greek Yogurt Dill Dip image

Crispy, spicy Panko-coated zucchini fries dipped in a cool Greek yogurt dill dip. Yum.

Provided by Kare for Kitchen Treaty

Time 35m

Number Of Ingredients 16

1 pound zucchini (cut into 4" - 5" sticks)
1/4 cup all-purpose flour
2 eggs
2 cups Panko breadcrumbs
1/2 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (or less or more depending on your heat preference)
2 tablespoons olive oil
1 cup Greek yogurt
1 small clove garlic (minced)
1 tablespoon fresh chopped dill
1 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Make the dip
  • In a small bowl, blend together the yogurt, garlic, dill, lemon zest, lemon juice, salt, and pepper. Cover and refrigerate for at least an hour to allow the flavors to meld.
  • Make the zucchini fries
  • Heat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
  • Prepare your ingredients: Place flour in a large Ziploc bag. Crack eggs into a shallow dish and whisk along with 2 tablespoons water. Mix Panko breadcrumbs, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
  • Add zucchini to the Ziploc bag with flour and shake gently until all pieces are covered.
  • Working with three or four sticks at a time, dip the zucchini sticks in the egg mixture then place in the Panko mixture, turning to coat. Gently lay on the baking sheet. Repeat, mixing the Panko breadcrumbs often to keep spices distributed, until all pieces are coated.

SPICY BAKED SWEET POTATO FRIES WITH COOL GREEK YOGURT RANCH

Spicy Baked Sweet Potato Fries with Cool Greek Yogurt Ranch image

These addicting baked sweet potato fries crisp up nicely in the oven. Dip them in a healthy garlicky dill ranch and you're good to go. Just reduce or leave out the sugar and spices if you prefer a less-spicy version.

Provided by Kare for Kitchen Treaty

Time 45m

Number Of Ingredients 15

2 medium sweet potatoes
2 tablespoons corn starch
2 tablespoons olive oil
1 tablespoons pure maple syrup or brown sugar
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/8 teaspoon cayenne pepper (add more for more heat)
1/4 teaspoon kosher salt or fine-grain sea salt + more to taste
3/4 cup Greek yogurt (I use full-fat)
2 teaspoons white wine vinegar or champagne vinegar
1-2 garlic cloves (smashed and finely minced (about 2 heaping teaspoons))
2 tablespoons finely chopped onion
1 tablespoon fresh minced dill
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Scrub sweet potatoes or peel off the skin, if you desire (I like to leave it on). Cut sweet potatoes into approx. 1/4-inch matchsticks. Put sweet potatoes into a large bowl and sprinkle the cornstarch over the top. Toss with your clean hands until all of the fries are coated. Drizzle with olive oil and toss again. Add maple syrup or brown sugar, chili powder, cinnamon, cayenne pepper, and salt. Toss until all of the fries are coated.
  • Lay fries on a baking sheet, making sure there is a little space around each fry - don't crowd or pile them! Depending on the size of your baking sheet, you may need to use two (I do).
  • Place in oven and bake until golden brown and many are crisp, about 25 minutes, turning carefully at right around the 15 minute mark. Remove fries from oven and let cool a bit.
  • While the fries are baking, make your ranch dip. In a small bowl, stir together all of the dip ingredients. Taste and add more salt and pepper if desired.
  • Add more salt to the fries if you like. Serve warm with the ranch dip.

Tips:

  • Choose the right potatoes: For the best Greek fries, use a starchy potato like Russet or Idaho potatoes. These potatoes will hold their shape well during frying and will become crispy on the outside and fluffy on the inside.
  • Cut the potatoes into even wedges: This will help them cook evenly. If the wedges are too thick, they will not cook through, and if they are too thin, they will become overcooked and crispy.
  • Soak the potatoes in water: This will help to remove excess starch from the potatoes, which will help them to become crispy. Soak the potatoes for at least 30 minutes, or up to overnight.
  • Dry the potatoes thoroughly: Before frying the potatoes, make sure they are completely dry. This will help them to crisp up and prevent them from sticking together.
  • Use a high-quality olive oil: Olive oil is the traditional oil used for frying Greek fries. Choose a good quality extra virgin olive oil for the best flavor.
  • Fry the potatoes in batches: Do not overcrowd the pan when frying the potatoes. This will cause them to steam instead of fry and will result in soggy fries.
  • Season the fries while they are hot: Once the fries are cooked, immediately season them with salt, pepper, and oregano. This will help the seasoning to stick to the fries.

Conclusion:

Greek fries are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. With a few simple tips, you can make the best Greek fries at home. So next time you are looking for a tasty and satisfying side dish, give Greek fries a try!
