Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 11

3 tablespoons vegetable oil
1 pound chicken livers, cleaned and deveined (about 1 pint)
Kosher salt and freshly ground black pepper
5 tablespoons unsalted butter
8 ounces cremini mushrooms, sliced about 1/8-inch thick (about 4 cups)
1 small red onion, cut in 1/2-inch dice (about 1 cup)
1/4 cup cognac or dry sherry
1 cup chicken broth
1 cup whole Greek yogurt
12 ounces wide egg noodles
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Bring a large stockpot of salted water to a boil (it should taste like sea water).
  • Meanwhile, heat the oil over medium-high heat in a large, straight-sided saute pan until it shimmers. Sprinkle the chicken livers liberally with salt and pepper. In two batches, add the chicken livers to the hot oil and brown on both sides, about 3 minutes per batch. Transfer the browned livers to a plate.
  • Once all of the livers have been browned, add 2 tablespoons of the butter to the pan. Add the mushrooms and cook until lightly browned, about 5 minutes, stirring occasionally. Add 2 more tablespoons of the butter and the onions, season with salt and pepper and cook until slightly softened and lightly browned, 3 to 5 minutes. Take the pan off of the heat and carefully add the cognac. Stir to combine, place the pan back on the heat and cook for 1 minute, stirring constantly. Add the chicken broth and cook until reduced by half, 3 to 5 minutes.
  • Meanwhile, slice the browned livers into long strips about 1/2-inch thick.
  • Reduce the heat to medium-low, stir the yogurt into the sauce and season with salt and pepper. Then add the livers and stir to combine. Simmer the sauce until the livers are cooked to your liking, 3 to 5 minutes for medium. Season with salt and pepper.
  • While the livers are cooking in the sauce, cook the egg noodles in the boiling water until al dente, 5 to 8 minutes. Then drain. Toss the hot egg noodles with the remaining butter and half of the parsley. Season with salt and pepper.
  • To serve, divide the egg noodles among 4 to 6 bowls and top with the chicken livers and sauce. Garnish with the remaining parsley. Alternatively, this dish can be served family-style on a large platter.

CHOPPED CHICKEN LIVERS

Chopped Chicken Livers image

Provided by Food Network Kitchen

Categories     appetizer

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 10

1 pound chicken livers, (preferably fresh)
6 tablespoon rendered chicken fat (schmaltz), recipe follows
1 cup coarsely chopped onion
2 teaspoon kosher salt plus more
Freshly ground pepper
2 hard-cooked large eggs, finely chopped
8 ounces chicken fat and/or skin, cut into small pieces
1 sprig fresh thyme or 1/4 teaspoon dried thyme
1 clove garlic, minced
2 tablespoons cold water

Steps:

  • Rinse the livers and pat dry with a kitchen towel. Clean the livers, by trimming and discarding any visible fat, green parts, or membrane. Set the livers aside.
  • In a large saute pan, over medium heat, heat 2 tablespoons of the chicken fat and add the onions. Cook, stirring occasionally, until golden brown, about 10 to 12 minutes. Transfer the onions to a plate with a slotted spoon. Wipe out the pan.
  • Spread the livers out in a single layer on a sheet pan and season with the salt and pepper. Raise the heat to high, add 2 tablespoons of the fat to the pan and when the fat begins to shimmer, lay the livers in the pan in a single layer. Working in batches, cook the livers turning each over once, until browned, about 2 to 2 1/2 minutes per side. Transfer the livers to the plate with the onions. Repeat with 2 tablespoons fat and remaining livers. Cool.
  • Coarsely chop the livers with a knife (don't be tempted to use a food processor). In a medium bowl, gently combine the livers with the eggs, onions, and remaining 2 tablespoons fat. Season with salt and pepper to taste. Refrigerate for 2 hours before serving. Serve with toast and cornichons if desired.
  • Serving suggestion: Toasted rye or pumpernickel bread and cornichons .
  • In a small saucepan combine the chicken fat or skin, thyme, garlic, and water. Bring the mixture to a simmer over medium-low to medium heat. Cook until the fat has rendered (liquefied) and the skin becomes crispy, about 35 to 45 minutes. (Adjust the heat, as needed, to keep the skin from browning too quickly.) Set the chicken fat aside to cool slightly. Strain into a small bowl. If desired reserve the crispy skin. Refrigerate, covered, for up to one week.
  • Yields: about 1/2 cup

Tips:

  • Choose fresh chicken livers: Fresh chicken livers should be plump, smooth, and free of any blemishes or discoloration. Avoid any livers that are slimy or have an off odor.
  • Clean the chicken livers thoroughly: Rinse the chicken livers under cold water and remove any excess fat or connective tissue. You can also soak the livers in milk for 30 minutes to help remove any bitterness.
  • Cook the chicken livers properly: Chicken livers should be cooked quickly over high heat to prevent them from becoming tough. Overcooked chicken livers will be dry and crumbly.
  • Season the chicken livers well: Chicken livers have a mild flavor, so it's important to season them well. You can use a variety of seasonings, such as garlic, onion, paprika, chili powder, or cumin.
  • Serve the chicken livers immediately: Chicken livers are best served immediately after they are cooked. You can serve them as an appetizer or main course with a variety of sides, such as rice, potatoes, or vegetables.

Conclusion:

Greek chicken livers are a delicious and versatile dish that can be enjoyed by people of all ages. They are a good source of protein and iron, and they are also low in calories and fat. If you are looking for a new and exciting way to cook chicken livers, give this Greek recipe a try. You won't be disappointed!
