1 (15 ounce) can diced tomatoes, with their liquid

  • Add the chicken and cook until it is heated through.
  • Put the chicken on plates (over rice if desired), and spoon the sauce equally over the chicken.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured out. This will help you stay organized and make the cooking process go more smoothly.
  • Choose the Right Chicken: For this recipe, boneless, skinless chicken breasts or thighs work best. If you are using chicken breasts, pound them thin so that they cook evenly.
  • Season the Chicken Generously: The key to flavorful chicken is to season it well. Use a combination of salt, pepper, garlic powder, and oregano to give the chicken a delicious crust.
  • Cook the Chicken in Olive Oil: Olive oil is a healthy and flavorful fat that will help the chicken brown and cook evenly. Be sure to heat the olive oil over medium heat before adding the chicken.
  • Don't Overcook the Chicken: Chicken breasts and thighs are very thin, so they cook quickly. Be careful not to overcook them, or they will become dry and tough.
  • Add the Tomatoes and Olives: Once the chicken is cooked, add the tomatoes, olives, and capers to the pan. Stir to combine and cook for a few minutes, until the tomatoes have softened and the olives have warmed through.
  • Serve Immediately: Serve the Greek chicken cutlets with tomatoes and olives over rice, pasta, or roasted vegetables. Garnish with fresh parsley or oregano for a pop of color and flavor. Enjoy!
