Time 1h

Yield 8 serving(s)

Number Of Ingredients 13

6 -8 slices bacon, cut into small pieces
1 small onion, finely chopped
1 small celery rib, finely chopped
3 canned whole tomatoes, chopped
2 medium boiling potatoes, peeled and cubed
1 teaspoon salt
1/8 teaspoon ground allspice
1 pinch sugar
1 small bay leaf
2 cups light cream or 2 cups half-and-half
1 cup milk
1/2 lb frozen corn
freshly ground black pepper

Steps:

  • In large non-stick pan, fry bacon until crispy; remove to paper-towel-lined plate with slotted spoon and allow to drain. Add onion to fat and saute over moderate heat until golden, 4-5 minutes. Add celery and saute until softened, about 2 minutes. Add tomatoes, potatoes, salt, allspice, sugar and bay leaf; stir well. Cook over moderate heat until the mixture begins to sizzle.
  • Transfer vegetables to large soup pot over low heat, cover, and cook, stirring occasionally, until the potatoes are tender, 15-20 minutes. Stir in frozen corn, cream and milk and bring just to a boil. Remove from heat, remove bay leaf, and correct seasonings. Refrigerate if not using immediately. Serve with bacon bits as garnish.

Time 45m

Yield 8

Number Of Ingredients 8

½ cup diced bacon
4 medium potatoes, peeled and chopped
1 medium onion, chopped
2 cups water
3 cups cream-style corn
2 teaspoons salt
ground black pepper to taste
2 cups half-and-half

Steps:

  • Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
  • Mix potatoes and onion into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the water, and stir in corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
  • Warm the half-and-half in a small saucepan until it bubbles. Remove from heat before it boils, and mix into the chowder just before serving.

Tips:

  • Fresh is best: For the best flavor, use fresh corn kernels, potatoes, and celery. If you don't have fresh corn, frozen corn will work in a pinch.
  • Don't overcrowd the pot: When you're adding the vegetables to the pot, don't overcrowd it. This will prevent them from cooking evenly.
  • Use a good quality stock: The stock you use will make a big difference in the flavor of the chowder. Use a homemade stock or a good quality store-bought stock.
  • Don't overcook the corn: Corn only takes a few minutes to cook. Overcooking it will make it tough.
  • Season to taste: Be sure to season the chowder to taste with salt and pepper. You can also add other spices, such as paprika, cayenne pepper, or chili powder, to taste.

Conclusion:

Great Lakes Corn Chowder is a delicious and hearty soup that's perfect for a cold day. It's easy to make and can be tailored to your own taste. So next time you're looking for a comforting soup, give this recipe a try. You won't be disappointed!
