SAUSAGE GRAVY

Grandma's own! Adjust the milk to the thickness you like. Works with bacon, too. Serve hot over freshly baked biscuits!

Provided by Denyse

Categories     Side Dish     Sauces and Condiments Recipes     Gravy Recipes     Pork Gravy

Time 30m

Yield 12

Number Of Ingredients 3

1 pound ground pork sausage
3 tablespoons all-purpose flour
3 cups milk

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
  • Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
  • Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

Tips:

  • Choose the right sausage or hamburger: For a richer flavor, use a sausage or hamburger with a higher fat content (80/20). Ground beef or breakfast sausage adds extra flavor and a juicy texture to the gravy. Use a smoky sausage or add a tablespoon of smoked paprika to give the gravy a more complex flavor.
  • Brown the meat well: Browning the meat adds flavor and color to the gravy. Make sure to brown the meat thoroughly all over before adding it to the gravy mixture.
  • Use a good quality broth: A flavorful broth forms the base of the gravy. Use a store-bought broth or make your broth from scratch using bones or vegetables.
  • Add some vegetables: Vegetables like onions, garlic, carrots, and celery add flavor and texture to the gravy. Sauté the vegetables until softened, then add them to the gravy mixture.
  • Season to taste: Season the gravy with salt, pepper, and other herbs and spices as desired. Taste the gravy and adjust the seasonings until it's just right.
  • Thicken the gravy: If you want a thicker gravy, you can add a cornstarch or flour slurry. Whisk a tablespoon of cornstarch or flour with a little water until smooth, then stir it into the simmering gravy. Bring to a boil, stirring constantly, until the gravy thickens.
  • Serve the gravy immediately: Gravy is best served hot and fresh. Serve it over your favorite dishes, such as mashed potatoes, rice, or roasted vegetables.

Conclusion:

Sausage or hamburger gravy is a classic dish that's easy to make and packed with flavor. With a few simple ingredients and a little bit of time, you can create a delicious gravy that will elevate any meal. So next time you're looking for a quick and easy weeknight dinner, give sausage or hamburger gravy a try.
