MOIST BAKED BREADED PORK CHOPS IN MUSHROOM GRAVY

Moist Baked Breaded Pork Chops in Mushroom Gravy image

This is a wonderful comfort food and has become one of my family's favorite pork chop recipes --- you may season the breadcrumbs anyway desired adding in Parmesan cheese to your breadcrumb mixture will only improve the flavor --- depending on the size of your pork chops one more won't hurt if you have the room in your baking pan, and baking time will vary depending on the thickness, do not use fast-fry for this -- this is *very* good!

BAKED STUFFED PORK CHOPS AND PAN GRAVY

Baked Stuffed Pork Chops and Pan Gravy image

I first cooked these in the early 90's when I belonged to a cooking school and they're great! Make sure your guests are hungry: this is a very hearty entree. Recipe #320348 makes a really good side dish. I cook them with apple juice - just haven't gotten around to trying them with wine. Note: The recipe is easily modified for thinner chops by reducing the browning and baking times.

Time 2h15m

Yield 6 serving(s)

Number Of Ingredients 14

4 slices day old bread, trimmed of some crust, cut in 1/4-inch cubes
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
2 tablespoons parsley, chopped
1/2 cup dark raisin
1 1/2 teaspoons salt
1 teaspoon dried marjoram
1/8 teaspoon pepper
6 pork chops, 1 1/2-inch thick (each about 3/4 pound)
1/4 cup flour
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1 cup white wine or 1 cup apple cider

Steps:

  • Melt 1/4 cup butter in a large skillet over medium high heat and saute the chopped onion and celery, stirring, until onion is golden, about 5 minutes. Remove skillet from heat. Gently stir in bread cubes. Add parsley, raisins, 1 1/2 teaspoons salt, marjoram and pepper; toss lightly to combine. Set aside.
  • Preheat oven to 350°F Trim excess fat from chops, reserving the fat. Using a sharp paring knife, cut a pocket in each chop, all the way to the rib. Fill each pocket with 1/4 cup stuffing; fasten together with a couple of toothpicks.
  • Mix together the 1/4 cup flour and 1 teaspoon salt. Lightly coat the pork chops on both sides with flour mixture, reserving remaining seasoned flour for gravy.
  • Heat 2 tablespoons butter and reserved pork fat in a large skillet. Over low heat, cooking 3 at a time, brown chops well on both sides, turning with tongs, 8-10 minutes on each side or until browned. Remove each batch of browned chops to paper towels.
  • Pour off fat from skillet, and add apple juice, white wine, cider or a combo of liquids to skillet. Stir over medium heat to dissolve browned bits. Pour into the bottom of roasting pan. Stand chops bone-side down in bottom of pan. Cover with foil and bake in preheated oven 1 hour.
  • Uncover and bake 30 to 40 minutes, or until tender. Remove chops to platter and tent with foil to keep warm.
  • Optional Gravy: Over medium heat boil drippings, uncovered, until reduced to 1 cup. Dissolve reserved flour mixture in 1/2 cup of water. Add to drippings and bring to a boil, stirring; simmer 3 minutes. Taste and adjust seasonings. Strain if necessary. Serve with chops.

Onion and Herb Baked Pork Chops with Gravy image

A dish passed down for many years! Its a comfort food when you need it! Simple, easy and tasty too!

Provided by Jenny Scheuring

Categories     Other Sauces

Time 2h45m

Number Of Ingredients 13

4 bone in or bone out pork chops
2 tsp salt and pepper
2 tsp mrs dash onion and herb seasoning mix
2 tsp garlic powder
1 1/2 c water
HOMEMADE PORK GRAVY
1 medium sweet onion sliced
2 Tbsp all purpose flour
1-2 c pork drippings from baking dish
1/3 c beef or pork broth (optional)
1 tsp salt
1 tsp pepper
1 Tbsp olive oil (used to sear pork in as well)

Steps:

  • 1. Season Pork Chops with Garlic powder, salt, Mrs Dash onion and herb seasoning mix on both sides, be sure to rub in. Heat Olive oil in a skillet. Sear Pork chops in oil for 3 minutes on one side, flip and sear on other side for one minute longer. When golden brown transfer pork chops to a baking dish. Reserve oil and brown bits in pan to make the gravy later.
  • 2. Preheat the oven to 300 degrees. Cover pork chops with water, cover the baking dish with foil and cook for 2 hours. Remove from oven when done, place pork chops on a hot plate and keep warm. Reserve drippings in the pan, should be about two cups of drippings. If less thats okay, you can use a little beef or pork broth.
  • 3. To make the gravy. Cut up the onions, slice in half and peel, then cut into slices. Heat up your pan with the oil and pork brown bits, add a bit more oil if needed. Cook onions till they are lightly brown and translucent. Add 2 tablespoons of flour and stir for 2 minutes until browned. Turn down heat to medium, and whisk in pork drippings, keep whisking until thickened up. If you would like more of a beefy flavor you can add a bit of beef or pork broth (add however much you desire, but careful not to water it down too much) Stir again and let boil. Season with salt and pepper, if you want you can add more mrs dash onion and herb to the gravy. Cook the gravy until heated through and thick. Spoon ontop of pork chops. Great served with baked beans and veggies. Also great with mashed potatoes. Enjoy!

Tips:

  • Pork chop selection: Choose bone-in pork chops that are at least 1 inch thick for best results. Thinner chops may overcook and become dry.
  • Seasoning: Don't skimp on the seasonings! A flavorful blend of herbs and spices will enhance the taste of the pork chops and make the gravy irresistible.
  • Searing: Searing the pork chops before baking is essential for creating a delicious crust and locking in the juices. Make sure to sear them in a hot skillet over medium-high heat.
  • Gravy: The gravy is what makes this dish so special. Use the pan drippings from searing the pork chops to make a rich and flavorful gravy. Add a splash of white wine or chicken broth for extra flavor.
  • Baking time: The cooking time will vary depending on the thickness of the pork chops. Generally, bone-in pork chops should be baked for 25-30 minutes at 400°F (200°C). Use a meat thermometer to ensure that the internal temperature reaches 145°F (63°C) before removing from the oven.
  • Resting: Allow the pork chops to rest for a few minutes before serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful chop.

Conclusion:

This gravy-baked pork chops recipe is a classic comfort food that is sure to please everyone at your table. The pork chops are juicy and tender, the gravy is rich and flavorful, and the whole dish comes together in under an hour. Serve it with mashed potatoes, roasted vegetables, or a simple salad for a complete meal. With its amazing flavor and ease of preparation, this recipe is a keeper.
