SUMMER TACOS WITH CORN, GREEN BEANS AND TOMATILLO SALSA

Summer Tacos with Corn, Green Beans and Tomatillo Salsa image

Another way to use the versatile green bean in summer cooking. Cut into one-inch lengths and add to a mix of corn, chiles and green tomatillo salsa. Green beans are such a reliable and versatile summer vegetable. I serve them on their own, of course, but I also throw them into various pasta dishes and salads, and here I've used them in a taco filling. Cook the beans first, just until tender, then cut them into one-inch lengths and add to this sweet and spicy mix of corn, chiles and green tomatillo salsa.

4 ears corn
2 tablespoons extra-virgin olive oil
1 small red or white onion, finely chopped
Salt to taste
1 serrano chile, minced

1 recipe fresh tomatillo salsa
8 warm corn tortillas
1/4 to 1/2 cup crumbled feta, queso fresco or goat cheese

Yield Serves 6

Number Of Ingredients 11

2 small butternut squash (about 2 1/2 pounds total), halved
2 tablespoons olive oil
1/4 cup chopped onion
1 tablespoon minced garlic
1/2 cup drained canned corn
12 6-inch-diameter corn tortillas

ACORN SQUASH WONDER TACOS/CHALUPAS

Acorn Squash Wonder Tacos/Chalupas image

This is one of those recipes where you'll cross your eyes in pleasure after tasting. Great for vegetarian meat substitute or hiding veggies from your kids. They do not taste like squash. If you don't have cotija cheese, you can substitute Parmesan. But cotija marries well with cumin. Serve with refried beans for extra yum.

1 egg
2 teaspoons ground cumin
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon salt, or more to taste

Tips:

  • Choose the right squash: Summer squash varieties like zucchini and yellow squash are best for grating. Avoid using winter squash varieties like butternut or acorn squash, as they are too dense and hard.
  • Grate the squash coarsely: This will help the squash cook evenly and prevent it from becoming mushy.
  • Use fresh corn: Fresh corn on the cob is best, but you can also use frozen or canned corn in a pinch.
  • Roast the tomatillos: Roasting the tomatillos concentrates their flavor and makes them slightly smoky.
  • Use a flavorful cheese: A sharp cheddar cheese or a Mexican cheese blend will add a lot of flavor to the tacos.
  • Serve the tacos with your favorite toppings: Some popular toppings include guacamole, sour cream, salsa, and pico de gallo.

Conclusion:

These Grated Squash, Corn, and Tomatillo Tacos are a delicious and easy way to enjoy fresh summer produce. The squash, corn, and tomatillos are roasted until tender and flavorful, and then combined with cheese, cilantro, and spices. The tacos are then served with your favorite toppings. This recipe is a great way to get your kids to eat their vegetables, and it's also a perfect meal for a weeknight dinner.
