3 pink grapefruit
3 tablespoons wine vinegar
2 teaspoons Dijon mustard
Salt and pepper
1/2 cup plus 1 tablespoon vegetable oil
1 1/2 pounds large shrimp, peeled and deveined
1 1/2 pounds spinach, stems trimmed and leaves washed well (about 3 1/2 quarts)
1/2 red onion, thinly sliced

Steps:

  • With a sharp knife, peel the grapefruit, removing all the bitter white pith. Slice about 3/8 inch thick.
  • In a large bowl, whisk together the vinegar, mustard, and 1/8 teaspoon each salt and pepper. Drizzle in 1/2 cup of the oil, whisking to combine.
  • Season the shrimp with 1/2 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, heat the remaining tablespoon oil over medium heat. Add the shrimp, and cook, turning once, until pink, about 3 minutes per side.
  • Add the grapefruit, cooked shrimp, spinach, and onion to the vinaigrette in the large bowl. Toss well. Serve at once.

5 tablespoons red wine vinegar
1 teaspoon fennel seeds, crushed
1/2 cup olive oil
2 white grapefruits
1 10-ounce head radicchio, torn into bite-size pieces
8 ounces baby spinach leaves
1/2 cup Kalamata olives or other brine-cured black olives, pitted

Steps:

  • Combine vinegar and fennel seeds in medium bowl. Gradually whisk in oil. Season dressing with salt and pepper.
  • Cut all peel and white pith from grapefruits. Cut grapefruits between membranes to release segments. Stir segments into dressing. Let stand at least 15 minutes and up to 1 hour.
  • Toss radicchio, spinach and olives in bowl. Add grapefruit segments and dressing to coat. Season with salt and pepper.

1 grapefruit, cut in supremes
1/2 cup walnuts, chopped
1/4 cup dried cranberries
4 cups baby spinach leaves

  • In a big bowl, mix olive oil, balsamic vinegar and honey.
  • Add grapefruit supremes, walnuts, cranberries and baby spinach leaves.

2 c arugula
1 fennel bulb
1 c grapefurit sections-try to use 1 pink and one red grapefruit for nice color
1/4c minced shallots or chive blossoms.
2 tbs minced fresh parsley leaves
2 tbs olive oil
1 tbs balsamic vinegar
2 tbs dijon mustard
salt and pepper to taste.
generous amounts of shave pamesan reggiano cheese.
garnish chive blossoms and pansies

  • in small bowl wisk together the shallots, olive oil vinegar,mustard, parsley, salt and pepper. Add to tossed greens and grapefruit. Place flowersand chive blossom on top and then shaved parmesian.
