1 1/4 cups flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup brown sugar (packed)
1 cup milk
1 egg (beaten)
1/2 cup chunky applesauce
2 tablespoons melted butter
1 cup grape nut flakes cereal
1/2 cranberries (optional) or 1/2 other dried fruits (optional)

Steps:

  • Stir together the first 5 ingredients.
  • Stir beaten egg into milk then add applesauce and stir well.
  • Mix wet ingredients into dry stirring well.
  • Stir in melted butter, cereal, and raisins.
  • Let stand 5 minutes.
  • Fill greased muffin tins 2/3 full.
  • Bake at 400 degress for about 20 minutes.

1 1/4 c grape-nut original cereal
1 c hazelnut coffee creamer
1 tsp vanilla extract
3 Tbsp butter,melted
1/2 c peach butter or mashed banana or applesauce
1 large egg
1/2 c chopped walnuts
1 1/2 c all purpose flour
1 Tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 c brown sugar, firmly packed

Steps:

  • 1. Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.
  • 2. In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.
  • 3. To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.
  • 4. Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.

1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
2 medium ripe bananas, mashed
1/2 cup plain yogurt
1/2 teaspoon vanilla
1 cup Post Grape-Nuts cereal

Steps:

  • Preheat oven to 350.
  • Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  • Beat the egg in a small bowl; stir in bananas, yogurt and vanilla.
  • Add to flour mixture; stirring until just moistened (batter will be lumpy; do not overmix!).
  • Stir in cereal.
  • Spoon batter into a 12-cup muffin tin that has been sprayed with cooking spray, filling each cup 2/3 full.
  • Bake in preheated oven for 25 minutes or until golden brown.
  • Serve warm.
  • NOTE: Muffins can be frozen for up to 6 months.

1/2 cup raisins
2 Tbsp. margarine, melted

Steps:

  • PREHEAT oven to 400ºF. Combine cereal and milk; let stand 3 min. Meanwhile, mix flour, baking powder, cinnamon and salt in large bowl; set aside. Beat egg in medium bowl. Add applesauce, sugar, raisins and margarine; mix well. Stir in cereal mixture until well blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) SPOON evenly into 12 (2-1/2-inch) muffin cups sprayed with cooking spray, filling each cup two-thirds full. BAKE 20 min. or until wooden toothpick inserted in centers comes out clean. 1 1/2 cups plus 1 tablespoon all-purpose flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 tablespoons granulated sugar, divided
2 large eggs
1 tablespoon orange zest
2/3 cup sweet wine (such as Rieisling or Muscata)
1 cup seedless red grapes

Steps:

  • Place a rack in the middle of the oven, and preheat to 375 degrees F.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter with 2/3 cup sugar using an electric mixer on medium speed, until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in zest.
