Steps:
- Sterilize and dry jars for jelly, and set side. I like to use my dishwasher. New lids are recommended for best results.
- Combine grape juice and pectin in a large pot over medium-high heat. Bring to a boil, and stir one minute at a rolling boil. Stir in sugar for a few minutes to completely dissolve. Remove from heat.
- Ladle the hot jelly into the jars, leaving 1/2 inch of space at the top. Wipe rims of jars with a clean dry cloth. Cover with a lid and ring to seal. Let stand 24 hours at room temperature, then refrigerate. Jelly may take up to a week to set. Once set, it is ready to serve. Store in the refrigerator for up to three weeks, once set. If canning for long term storage, process in a hot water bath for 10 minutes, or contact your local extension for processing times in your area.

GRAPE JELLY
To determine whether or not the jelly is done cooking, use a candy thermometer and the "sheeting method," described below. Don't use overripe fruit for jelly, as it may not set up well.

Steps:
- Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
- In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
- Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

Steps:
- To prepare juice. Select about one-fourth underripe and three-fourths fully ripe grapes. Sort, wash, and remove stems from grapes. Crush grapes, add water, cover and bring to boil on high heat. Reduce heat and simmer for 10 minutes. Extract juice. To prevent formation of tartrate crystals in the jelly, let juice stand in a cool place overnight, then strain through two thicknesses of damp cheesecloth to remove crystals. To make jelly. Measure juice into a kettle. Add sugar and stir well. Boil over high heat to 8 degrees above the boiling point of water (220 degrees), or until jelly mixture sheets from a spoon. Remove from heat; skim off foam quickly. Pour jelly immediately into hot containers, seal and process 5 minutes in boiling water. Remove jars; cool and store. This recipe yields 5 six-ounce glasses.

FIG PRESERVES (JELLY) STRAWBERRY,GRAPE,PEACH
I have used strawberry, grape and peach jello and are all very good. The juice from the mashed figs is your liquid. You may have to adjust your times on cooking as I did and put my times in the directions. And I also have tried with real strawberries and made it chunky but I prefer the smooth. Give it a try and let me know how it...

Steps:
- Preheat oven to 375 degrees. Brush a 9-inch square baking pan with butter and line with parchment paper, leaving a 2-inch overhang on two sides. Butter parchment.
- In a large bowl, whisk together flour, sugar, and salt. With a pastry cutter or your hands, work in butter until mixture resembles coarse meal with a few pea-size pieces of butter remaining. Add egg and vanilla extract; stir until dough just comes together. Set aside 1 cup dough and firmly press remaining dough into pan in an even layer. Using a small offset spatula, spread grape jelly over top.
- Combine reserved dough, peanuts, and peanut butter chips; crumble over jam layer. Bake until topping is deep golden brown, 45 to 50 minutes. Let cool completely in pan on a wire rack. Run a sharp knife around edges, then, using parchment, lift cake from pan and cut into 12 squares.

HOMEMADE CONCORD GRAPE JELLY

Steps:
- 1. Briskly boil grapes on stove top until whole grapes "pop" under the pressure of a spoon. Transfer to a canning sieve and press the pulp. Squeeze the left over remaining pulp through cheese cloth
- 2. Add the thick juice to a saucepan and add sugar, cooking slowly until dissolved. Rapidly boil until jellying point. We used the "plate test" to determine when the jelly was ready.
- 3. Pour jelly, boiling hot, into prepared canning jars - leaving ½ inch head space per recommendation for Weck jars. Process in boiling water bath for 10 minutes.
Tips:
- For the best results, use ripe, juicy grapes. This will give your jelly a sweeter, more flavorful taste.
- If you don't have a cheesecloth bag, you can use a fine-mesh strainer lined with a few layers of cheesecloth.
- Be sure to sterilize your jars and lids before canning the jelly. This will help to prevent spoilage.
- Process the jelly in a boiling water bath for the recommended amount of time. This will help to kill any bacteria and ensure that the jelly is safe to eat.
- Let the jelly cool completely before storing it in a cool, dark place. This will help to preserve the jelly and prevent it from spoiling.
Conclusion:
Grape jelly is a delicious and versatile condiment that can be used to add sweetness and flavor to a variety of dishes. It's also a great way to use up extra grapes. With just a few simple ingredients and a little bit of time, you can easily make your own grape jelly at home. So next time you have a bunch of ripe grapes on hand, be sure to try this easy recipe.
