GRAN'S GRANOLA PARFAITS
When my mother-in-law (Gran to our kids) had us over for brunch, I especially enjoyed her yogurt parfaits. They were refreshing, light and wholesome. I made a few changes to her recipe and came up with this sweet, crunchy and nutty variation. Yum! -Angela Keller, Newburgh, Indiana

- In a large bowl, combine the first 8 ingredients. Combine the butter, syrup and honey; drizzle over oat mixture and stir until well coated. Pour into a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 30 minutes, stirring every 10 minutes. Cool on a wire rack; crumble granola into pieces., Combine the fruits in a large bowl. For each parfait, layer 2 tablespoons yogurt, 2 tablespoons granola and 3 rounded tablespoons fruit in a parfait glass or dessert bowl. Repeat layers. Sprinkle with remaining granola. Serve immediately.

- Preheat the oven to 350 degrees F. Grease a 12-cup muffin tin generously with cooking spray.
- Microwave the honey for 20 seconds. (This will make it easier to stir into the granola.)
- In a medium bowl, combine the oats, chia seeds, coconut, vegetable oil, cinnamon, salt and honey. Stir until well combined.
- Divide the granola equally among the muffin cups and press down and up the sides of each cup with a measuring cup or shot glass to create a cup shape.
- Bake until the granola cups are golden brown, 12 to 15 minutes. Remove from the oven and, if needed, immediately reshape the center wells by pressing the measuring cup or shot glass into each cup. Let the granola cups cool in the pan for 30 minutes then run a sharp knife around the edges of each cup to release it from the pan.
- Fill each granola cup with yogurt and fresh fruit and serve. Or store the cooled granola cups in an airtight container for up to 1 week.
HOMEMADE BERRY GRANOLA PARFAITS

- For the granola: Preheat the oven to 350 degrees F.
- Toss the oats, almonds and coconut together on a baking sheet lined with a silicone baking mat.
- Whisk together the vegetable oil and honey in a liquid measuring cup, then pour over the oat mixture. Stir until all the oats and nuts are coated. Season with salt to taste.
- Bake until golden brown, 40 to 45 minutes.
- Remove the granola from the oven and allow it to cool. Add the cherries, cranberries, and pineapple chunks. Drizzle with some of the maple syrup and toss together.

- Preheat the oven to 350 degrees F. Toss together the oats, coconut and almonds in a large bowl. Whisk together the vegetable oil and honey in a small bowl, then stir into the oats mixture. Spread the mixture in an even layer on a rimmed baking sheet. Bake until golden brown, 17 to 20 minutes, stirring occasionally. Remove from the oven and allow to cool completely, about 20 minutes. Transfer the mixture to a large bowl and add the dried cranberries, raisins and sunflower seeds.
- Line up 4 parfait, wine or other tall glasses. Carefully spoon a large dollop of yogurt into each and top with a large spoonful of granola. Add a few berries, then drizzle with honey. Repeat the layers once more in each glass. Store extra granola in an airtight container for up to 1 month.
COCONUT-GRANOLA YOGURT PARFAITS

- Preheat oven to 325°. In a small saucepan, combine pomegranate juice, sugar and lemon juice. Bring to a boil; cook until liquid is reduced by half. Stir in butter and brown sugar until sugar is dissolved. Remove from heat; stir in salt, spices and vanilla., In a large bowl, combine oats, coconut and cashews. Drizzle with pomegranate juice mixture; toss to combine. Transfer to a greased 15x10x1-in. baking pan, spreading evenly., Bake 20-25 minutes or until lightly browned, stirring halfway. Cool on a wire rack. When completely cooled, stir in cranberries and chocolate chips., For parfaits, in a bowl, mix yogurt, 4 tablespoons honey, lime zest and lime juice until blended. To serve, layer 1/4 cup yogurt mixture, 2 tablespoons granola, 3 tablespoons chopped apple and 1 tablespoon pomegranate seeds in each of eight parfait glass. Repeat layers. (Save remaining granola for another use; store in an airtight container.), Drizzle parfaits with remaining honey. Serve immediately.
