A delicious old-fashioned white bread recipe just like Grandma used to make!

Provided by Nellie

Categories     Side Dish     Snack

Number Of Ingredients 5

1 package dry yeast (about 2 1/4 teaspoons)
1 cup warm water (about 30-40 seconds in the microwave is perfect)
3 cups bread flour (if you can't find this go ahead and use all-purpose)
1 teaspoon salt
1 tsp honey

Steps:

  • In a large bowl, mix the honey and warm water together, add the yeast and stir until dissolved.
  • Add 2 1/2 cups of the flour and the salt to the yeast mixture.
  • Stir until you get a ball of dough. The dough will be soft.
  • ---all of these parts are super handy to do if you have a mixer!
  • Put the dough on a floured surface. Knead until smooth and stretchy (about 9 minutes) adding in the remaining flour as needed to keep the dough from becoming too sticky.
  • ---if you have a mixer with a dough hook...use it here!
  • Place the dough in a bowl sprayed with cooking spray or coated with oil.
  • Put the bowl in a warm place and cover with a towel (or use my warm water in bowl method above :)) or plastic wrap sprayed with cooking spray.
  • Let the dough rise until doubled in size. (about 45 minutes)
  • Punch your down and then cover and wait 5 minutes.
  • Gently shape the dough into a loaf.
  • Place in loaf pan coated with spray, butter, shortening.
  • Cover (again with a towel or sprayed plastic wrap) and let rise until doubled again (about 45 minutes)
  • Preheat oven to 450 degrees F (230 degrees C)
  • Bake at 450 degrees for about 20 minutes.
  • if you like...apply a egg or milk wash before baking.

Grandma VanDoren's White Bread image

What Grandma used to make! Our family's favorite. The recipe was never written down (that I know of) until she shared it with me when she was in her 90's.

3 tablespoons active dry yeast

Categories     Recipes

Time 1h30m

Number Of Ingredients 10

¼ cup margarine
5 celery ribs with leaves, chopped
1 medium onion, chopped
1 teaspoon crushed dried thyme
½ to 1 teaspoon crushed dried sage
1 teaspoon salt (optional)
¼ teaspoon freshly ground pepper
2 1- pound loaves sliced, white bread
¼ cup chopped parsley
2 ½ to 3 cups canned chicken broth

Steps:

  • Preheat oven to 325°F. Melt margarine in a large nonstick skillet. Add celery and onion. Sauté until vegetables are very tender, about 10 minutes. Stir in thyme, sage, salt (optional), and pepper. Set aside.
  • Meanwhile, place bread slices on a baking sheet and lightly toast on both sides, about 10 minutes per side (or you can use the toaster). Break bread into bite-size pieces. Mix in vegetable mixture and parsley. (At this point, stuffing can be made one day ahead, placed in a self-sealing container, and refrigerated.)
  • In a medium saucepan, heat broth to a simmer. Place dressing mixture in a large mixing bowl. Add hot broth and stir until bread is evenly moistened, starting with 2½ cups broth and adding additional broth to reach desired consistency. Transfer mixture to a shallow baking dish. Cover with foil and bake for 30 minutes. Uncover and continue to bake until lightly browned, another 15 to 20 minutes.

Tips:

  • Mise en Place: Before you start baking, ensure all your ingredients are measured, prepped, and ready to use. This will make the baking process smoother and less stressful.
  • Quality Ingredients: Use high-quality, fresh ingredients for the best results. Fresh yeast, bread flour, and milk will make a noticeable difference in the final product.
  • Activate the Yeast Properly: Follow the recipe's instructions carefully for activating the yeast. If the water is too hot, it will kill the yeast, and if it's too cold, it will not activate properly. Lukewarm water (around 110°F) is ideal for activating yeast.
  • Knead the Dough Thoroughly: Kneading the dough develops the gluten, which gives the bread its structure and elasticity. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Proof the Dough in a Warm Place: Find a warm spot in your kitchen, such as a turned-off oven, to proof the dough. This will help the yeast grow and the dough to rise properly.
  • Shape the Dough Gently: When shaping the dough, handle it gently to avoid knocking out the air bubbles that have formed during proofing. This will result in a lighter, airier loaf of bread.
  • Bake the Bread at the Right Temperature: The oven temperature will vary depending on the recipe, but generally speaking, bread should be baked at a high temperature (around 400°F) for the first 10-15 minutes to create a crust, then at a lower temperature (around 350°F) for the remainder of the baking time to finish baking the inside of the loaf.

Conclusion:

Baking Granny's white bread is a rewarding experience that yields a delicious, fluffy loaf of bread perfect for sandwiches, toast, or simply enjoying with a smear of butter. With careful attention to detail, following the recipe's instructions, and using these tips, you can create a classic white bread that will be a hit with family and friends. Remember to practice patience, as the process of making bread takes time, but the end result is well worth the effort. Happy baking!
