Number Of Ingredients 9

Vegetable shortening, for greasing cookie sheets
3 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon baking soda
1/4 teaspoon salt
1 stick (8 tablespoons) butter, room temperature
1 1/2 cups sugar, plus more for sprinkling
2 large eggs
1 1/2 teaspoons vanilla extract
1/4 cup sour cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease two large (14-by-16-inch) cookie sheets with shortening.

On low speed, gradually add the flour mixture until just blended. Turn the dough out onto a lightly floured board, and gently pat with floured hands to a 1/4-inch thickness. Cut with a 2-inch round, floured cookie cutter and place about 1 inch apart on the cookie sheets. Bake until the teacakes are lightly browned, about 10 to 12 minutes. Do not overbake. Sprinkle with a couple of tablespoons of sugar and remove the cookies to a rack to cool.

Time 1h15m

Yield 48 cakes

Number Of Ingredients 10

1 cup shortening
1 1/2 cups sugar
3 eggs
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup buttermilk
1 -1 1/4 teaspoon almond extract
sugar

Steps:

  • Cream shortening in a large bowl; gradually add 1 1/2 cups sugar, beating well at medium speed of an electric mixer.
  • Add eggs, one at a time, beating after each addition.
  • Combine flour and next 3 ingredients; add to creamed mixture alternately with buttermilk.
  • Mix well.
  • Stir in extract.
  • Cover and chill 1 hour.
  • Roll dough to 1/4 inch thickness on a floured surface.
  • Cut with a 2 3/4 inch round cookie cutter; place on greased cookie sheets.
  • Bake at 350 degrees for 15 minutes or until edges begin to brown.
  • Sprinkle with sugar, if desired.

Tips:

  • Use room temperature ingredients. This will ensure that your tea cakes are light and fluffy.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, which will also make your tea cakes light and fluffy.
  • Gradually add the eggs, one at a time, beating well after each addition. This will help to prevent the batter from curdling.
  • Be careful not to overmix the batter. Overmixing can result in tough, dense tea cakes.
  • Bake the tea cakes until a toothpick inserted into the center comes out clean. Overbaking can dry out the tea cakes.
  • Let the tea cakes cool completely before frosting them. This will help to prevent the frosting from melting.

Conclusion:

Granny's tea cakes are a classic Southern dessert that is perfect for any occasion. They are light, fluffy, and full of flavor. With just a few simple ingredients, you can easily make these delicious tea cakes at home. So next time you're looking for a sweet treat, give Granny's tea cakes a try!
