DANISH POTATO SALAD

This recipe for Danish Cold Potato Salad, or Kold Kartoffelsalat as we called it in Denmark, is a great summer side dish and is a most-have for a traditional Nordic barbecue party. Cold Potato Salad is a fantastic side dish for most types of meat especially sausages and pork made on a grill. It is very easy to prepare and it has a great and fresh taste which is perfect for a hot summer day. For me, this dish has some great memories attached to it. I always remember it from my childhood and that we almost always had it as a side dish in the summer time. I did grow up in a family where almost all dinners, during the summer period, were prepared on a grill in the garden - so of course we did eat a lot of Danish Cold Potato Salad.

MOM'S DANISH POTATO SALAD

Mom's Danish Potato Salad image

A easy-to-make inexpensive potato salad. The homemade dressing for this is really good and I feel what makes it so good, and works equally well with macaroni salad. This is my mom's recipe, and her mom made it before her. I use about 6 hard-boiled eggs because I like my potato salad with more eggs. The prep and cook time is only a estimate, as I've never timed how long it takes to make this. If you use mayo instead of Miracle Whip I'd suggest starting with only 1 T. sugar and adding more to taste as mayo is sweeter than Miracle Whip. And of course please feel free to adapt this recipe ingredient-wise to your familie's preferences.

GRANNYS MUSTARD POTATOES SALAD

This is my dad's recipe. He was very good in the kitchen. You can serve it cold or warm and it's yummy either way.

Provided by tamra donham

Categories     Potato Salads

Time 1h20m

Number Of Ingredients 8

1 bag(s) 8lbs potatoes(peeled,chunked)
1 dozen peeled hard boiled eggs
1/3 c pickle relish
1 bunch green onion(cleaned)
1 Tbsp pepper
1/2 tsp sea salt and garlic salt
2/3 c yellow mustard
1/3 c miracle whip

Steps:

  • 1. Boil potatoes until soft. Drain water. Add relish, mustard and mayo. You can adjust the mustard and mayo to your taste. Mash completely and blend to a creamy consistency.
  • 2. Add pepper, salt and garlic salt. Mix thoroughly. Set aside.
  • 3. Chop onion and eggs in very small pieces or use a food processor.
  • 4. Mix onion and eggs with potatoes until well blended. Garnish the top with boiled egg slices and sprinkled chili powder.(optional)

Tips:

  • Use waxy potatoes: Waxy potatoes, such as red potatoes or Yukon Gold potatoes, hold their shape better than starchy potatoes, such as russet potatoes, when boiled. This will prevent them from becoming mushy in the salad.
  • Boil the potatoes until they are just tender: Overcooked potatoes will be mushy and fall apart in the salad. To prevent this, boil the potatoes until they are just tender when pierced with a fork.
  • Let the potatoes cool completely before assembling the salad: This will help to prevent the salad from becoming watery. You can also place the potatoes in the refrigerator for a few hours or overnight to chill them completely.
  • Use a light hand when dressing the salad: Too much mayonnaise or dressing will weigh down the salad and make it greasy. Start with a small amount of dressing and add more to taste.
  • Add the vegetables and herbs just before serving: This will help to keep them crisp and fresh. If you add them too early, they will wilt and become soggy.

Conclusion:

Granny's Danish potato salad is a classic side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With its creamy dressing, tender potatoes, and fresh vegetables, this salad is sure to be a hit at your next gathering. Remember to use waxy potatoes, boil them until they are just tender, and let them cool completely before assembling the salad. Use a light hand when dressing the salad, and add the vegetables and herbs just before serving. With these tips, you can make a delicious and refreshing potato salad that everyone will love.
