1/2 medium bell pepper, chopped (red or green)
1 small onion, chopped
1/2 c shredded carrot
5-6 c shredded cabbage (red, green, or both)
DRESSING:
1/2 c apple cider vinegar
1 c sugar
1/2 c oil
1/2 c water
1/4-1/2 tsp celery seed
1/2 tsp salt
dash of freshly ground black pepper

Steps:

  • 1. Stir vegetables together and place in a serving bowl. Mix dressing ingredients in a mason jar and shake well to blend. Pour dressing over salad. Mix. Cover bowl and refrigerate for several hours before serving. Best made the night before using. Keeps well for several days in the refrigerator.

3 tablespoons sugar
3 tablespoons vinegar
1 1/2 teaspoons salt
3/4 teaspoon dry mustard
1/4 teaspoon celery seed
8 cups cabbage
1 1/2 cups carrots
1 cup green pepper
1/4 cup green onion

Steps:

  • Shred cabbage, carrots, green pepper, and onion set aside in large bowl.
  • Mix mayonnaise, sugar, vinegar, salt, dry mustard, celery seed, pour over shredded cabbage mixture mix well.
