Time 4h5m

Yield 8

Number Of Ingredients 10

2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

GRANNY'S CHICKEN & DUMPLINGS

Granny's Chicken & Dumplings image

My Granny is the most amazing woman in the world, and her cooking is nothing short of perfect. Note: Cook time may be a bit off since I have no idea how long it takes to boil a whole chicken. If you can help me with that, please zmail me! :)

Provided by JelsMom

Categories     One Dish Meal

Time 50m

Yield 8 serving(s)

Number Of Ingredients 5

1 large whole chicken
2 cups flour
1/4 cup shortening
3/4 cup boiling water
salt

Steps:

  • Cook chicken in boiling salted water until tender.
  • Remove chicken from broth. Cool chicken, cut from bone, & set aside.
  • Measure 1 qt broth into large saucepan. Bring to a boil.
  • Put flour in large bowl; cut in shortening with pastry blender or fork.
  • Add boiling water a small amount at a time.
  • Shape mixture into a ball & roll to a thickness of 1/8" in a lightly floured board.
  • Cut into strips. Drop strips into boiling broth and cook for 8-10 minutes.
  • Add salt & pepper to taste. (Granny doesn't use pepper in her dumplings).

Tips:

  • Use a large pot, as the dumplings will expand while cooking.
  • Don't overcrowd the pot with dumplings. They should have enough room to move around and cook evenly.
  • Bring the broth to a full boil before adding the dumplings. This will help them cook evenly and prevent them from sticking together.
  • Cover the pot and reduce the heat to low once the dumplings have been added. This will help them cook through without boiling over.
  • Simmer the dumplings for 10-12 minutes, or until they are cooked through. You can check this by inserting a toothpick into the center of a dumpling. If it comes out clean, they are done.
  • Serve the dumplings immediately, with additional broth, if desired.

Conclusion:

Granny's Chicken Dumplings is a classic comfort food dish that is easy to make and always a hit with the family.
