1 teaspoon baking soda

1 ½ cups mashed banana ((about 3 large or 4 medium very ripe bananas))
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
  • In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
  • In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.

1½ teaspoons baking soda
Pinch salt
1 cup granulated sugar
½ cup vegetable oil
2 eggs
1 teaspoon vanilla extract
4 medium ripe bananas (mashed (about 1⅓ cups or 303 grams))
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Grease two 8x4-inch loaf pans; set aside.
  • In a medium bowl, whisk together the flour, baking soda and salt; set aside. In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract. Add the bananas and stir gently to combine. Add the flour mixture and stir until completely blended. Using a rubber spatula, fold in the walnuts.
  • Divide the mixture into the two loaf pans. Bake for 35 to 45 minutes, or until a thin knife inserted into the center comes out clean. If the loaves begin to get too dark before they are done in the middle, cover with foil. Allow to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely. 1 cup sugar
2 eggs
2 large bananas
2 cups all-purpose flour
1/2 teaspoon salt

My brothers & I used to argue over who would get the last piece of this bread, it was soo good. If you butter a slice & put it under the broiler or in the microwave, just until the butter melts, (unless you like it crispy) it is so good!

1/4 c shortening, butter flavor
3/4 c sugar or splenda
2 c flour (i use 1/2 wheat & 1/2 cake flour)
2 eggs (or egg beaters with yolk)
1/2 tsp baking soda
1/4 tsp salt
1/3 c buttermilk
1/2-3/4 c nuts broken in pcs. (i use pecans)
1/2 tsp almond extract

Steps:

  • 1. Preheat oven to 350 degrees farenheit. Using Pam, spray a loaf pan, or you can make a smaller version in a bundt pan (it's cute). Get large bowl & cream the sugar and shortening until blended well. In a small bowl, mash together the sliced up bananas & eggs. (Break the yoke if using real eggs and mix them a little before adding to the bananas). Pour the egg mixure in the sugar/shortening mix and blend well.
  • 2. In medium bowl stir dry ingredients together. Stir in the flour & buttermilk alternately, to the banana mixture, until blended. Stir in desired amount of nuts. Pour into pregreased loaf (or bundt) pan & bake in preheated oven, until toothpick comes out clean.
  • 3. My grandmother said to cook it 55 minutes, but I've found often it doesn't take that long. It's better to start checking it after 30 minutes, to avoid drying it out. I take it out as soon as the toothpick comes out clean, and let it cool on a thick straw coaster on the counter. After @ 15-20 minutes it'll still melt butter, so dig in and enjoy! :) You can also play around with spices or some ingreds, I added a cup of coconut & some ginger last time I made it & doubled the recipe to fill a bundt pan & it was really good, so don't be afraid to try new things, or sizes with it! The single recipe makes a cute little round breakfast type cake, in a bundt pan, to have with coffee too.

There is something magic in its simple ingredients, and when I experiment with it, I always find I still like the original...

1/2 c butter
1 c sugar (i've tried brown (love brown), and it works, but white is best in this recipe. it lets the other favors shine)
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c (takes about 3) over ripe bananas, mashed
2 c flour
1/2 c nuts, optional (i like pecans)

Steps:

  • 1. Cream butter, sugar & eggs. Add salt & baking soda; mix well. Beat in the bananas. Add the flour. Stir in nuts if using.
  • 2. Pour into a LARGE buttered loaf pan (mine measures 4 1/4" x 8 1/4" on the bottom, 5 1/2" x 9 1/2" on the top, 2 3/4" tall.) If pan is not big enough, it will not cook all the way in the center. If you have a smaller pan, don't use all the batter in one pan. The recipe says to let sit at room temp. For 20 min. I never do.
  • 3. Bake at 350 degrees F for about 45- 60 min., until toothpick inserted in the center comes out clean. Let cool 5-10 minutes before loosening sides and inverting, letting it cool the rest of the way on a cooling rack.
  • 4. Great out of the oven, even better the next day, if it doesn't get eaten first! Wrap up after it cools completely to keep it moist.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana nut bread will be. If you don't have any ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with an apple for a few days.
