1 2/3 cups Gold Medal™ all-purpose flour
1/3 cup packed brown sugar
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup milk
1/2 cup real maple syrup
1/3 cup butter, melted
1 egg
6 slices bacon, crisply cooked, crumbled (1/2 cup)

Steps:

  • Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, mix flour, brown sugar, baking soda and salt. In medium bowl, stir milk, syrup, butter and egg until blended. Add milk mixture to flour mixture; stir just until dry ingredients are moistened. Stir in bacon. Fill muffin cups three-fourths full.
  • Bake 16 to 18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

I Love BACON! I searched all over the internet for a yummy BACON muffin and nothing caught my eye. So I came up with this. Bacon and Maple flavored muffin, topped with a Praline & BACON crumb topping with a dallop of Bacon frosting. Taste close to Pancakes and bacon with lots of syrup.

1 lb bacon
1 3/4 c all purpose flour
2 3/4 tsp baking powder
1/2 tsp salt
2/3 c sugar
1/2 c applesauce
1/4 c maple syrup or pancake syrup (which ever you have on hand)
1/2 c milk
1 egg
1/8 tsp vanilla extract
CRUMB TOPPING
1/4 c cornstarch
1 Tbsp all purpose flour
1/2 c sugar
2 Tbsp butter, melted
1/4 c pecan chips
1/8 tsp cinnamon
FROSTING
1 1/2 c powdered sugar
2 Tbsp butter, melted
5 Tbsp bacon drippings

Steps:

  • 1. Preheat oven to 385 degrees Line cupcake pan with liners (this makes about 15 muffins) Prepare BACON and Topping First..... BACON- Take 5 slices of the BACON and cut in half cook thoroughly set aside to cool on a piece of paper towel. (I like my full slices of BACON baked, cooks more evenly which I bake in oven at 425 degrees on a wire rack placed on a cookie sheet lined with foil. Bake for about 10 min. flip and finish cooking for 10 min.) Cut up rest of BACON in cubes *I use scissors and take about 3-4 slices at a time and chop them into the pan. Cook until crisp (not undercooked or burnt). Set aside. When cooled crumble the pieces up. Topping- Mix Cornstarch, Flour, Sugar, Cinnamon, Pecan chips, then add melted Butter. Then add 2 tablespoons of the Bacon crumble pieces into the mixture. Set aside.
  • 2. Batter- Mix Flour, Baking Powder, Salt and Sugar. In separate bowl beat 1 Egg, then add Milk, Vanilla, Maple Syrup, Applesauce. Stir the wet ingredients into the Flour mixture (do not beat, batter will be lumpy). Then fold about 4 tablespoons of crumb mixture and All of the BACON crumbles into batter. Spoon into liners filling about 3/4 of the cup. Add crumb topping mixture to top of each one, about 2 tbl each, I did not waste this some had a little bit more. Bake until golden brown about 20-25 min each insert toothpick in center and when it comes out clean, its done. Cool or like me could not wait I grabbed one and cut open and put a slab of Butter and OMGGGOOODNESS!!! While the Muffin goodness is cooking make frosting
  • 3. Frosting- Mix Powdered Sugar, Butter, and warm bacon grease. This should be a thick frosting consistency. Put a dallop (I put in a baggie cut of tip) on each Muffin and top with pieces of the whole BACON pieces I had you reserve earlier. And you guessed it DEVOUR THE BACON GOODNESS!

Steps:

  • Heat the oven to 400 degrees F.
  • Line a half sheet pan with aluminum foil. Arrange the bacon in a single layer on a cooling rack, and set it in the prepared sheet pan. Bake until the bacon browns and the fat is rendered and bubbly. About 30 to 35 minutes.
  • Meanwhile, combine the brown sugar and pecans in a small food processor. Pulse about 15 times or until the pecans are finely chopped.

Picked up the recipe at their store/kitchen/cafe on my way back from Katrina Hurricane Relief along the Gulf Coast of USA. Has been a great treat for friends with a sweet tooth. LOL Actually my wife loves them too. I Bake'em, bag'em 6 in a bag, and we eat'em, whenever!

1 1/2 cups pecans, chopped
1 1/2 cups brown sugar
3/4 cup all-purpose flour
1/2 cup butter, melted
3 eggs, beaten

Steps:

  • Mix all dry ingredients together in small bowl.
  • Add melted butter to beaten eggs and then add dry ingredients. Refrigerate for 10 minutes.
  • Use metal mini-muffin pans and spray with a non-stick cooking spray for baking or with flour. You MUST use metal pans and non stick spray or muffins will stick in pans.
  • Use a tablespoon and spoon each muffun about 3/4 full into muffin pans. Use a second spoon to slide the mix cleanly off.
  • Preheat oven to 350 degrees and bake for 20 minutes. Remove from oven and let rest 5 minutes. Gently tap pans upside down and muffins will fall out.

One of the things that made this meal so memorable was the praline bacon that I had, so I took it upon myself to recreate it. The only difference is that I like mine better.

½ cup chopped pecans
3 tablespoons maple syrup
3 tablespoons butter
½ cup packed brown sugar
