GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

GRANDPA'S GERMAN CUCUMBER SALAD - JANET'S - KITCHEN
My German heritage on my father's side brought me many delicious recipes that I came to love and continue to prepare for my family time and again. This salad is just one of them. Althogh I have tweaked the recipe just a bit from the way Grandpa made it, it is still just as delicious as the way my grandfather made it. Making it several hours before serving it gives it time to marry the flavors. It is one of my favorite salads. I can sit down and eat a bowl of this salad all by itself in no time!

Steps:
- Place the sliced cucumbers in a bowl with lid. Add all the other ingredients and combine gently. Chill overnight, stirring once or twice. Add more salt to taste. Serve cold. The salt will draw out the water from the cucumbers and thin the dressing considerably. The dressing should be thin and tart.
Tips:
- Choose fresh, firm cucumbers for the best flavor and texture.
- Use a sharp knife to thinly slice the cucumbers so that they absorb the dressing evenly.
- If you don't have sour cream, you can substitute plain yogurt or buttermilk.
- Add a pinch of sugar to the dressing to balance out the acidity of the vinegar.
- Chill the salad for at least 30 minutes before serving to allow the flavors to meld.
