I used raspberry gelatin in this recipe and the flavor was delicious. I loved the date filling. I can see why Grandpa started making them in October. Not sure how that would work for me... I might have them all eaten by Christmas. I kept going back to sneak a cookie and the flavors were better every time!

2 c sugar
1 1/2 c honey
1/2 pkg gelatine powder - your choice of flavour
1/2 tsp ground cinnamon
1 pinch ground cloves
1 c water
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
3/4 c butter or margarine
7 c all purpose flour
2 c dates - chopped
2 c apples - chopped
1 c water

Steps:

  • 1. Boil honey and sugar together. Stir in gelatine powder. I like orange flavour. Grandpa used to use orange or raspberry.
  • 2. In a large bowl, add the honey mixture to the remaining ingredients.
  • 3. Mix well, should form soft dough. Cover and let rest for 1 hour or overnight.
  • 4. Roll out thin and cut with a 2" circular cookie cutter.
  • 5. Put 1 teaspoon filling mix* in middle of circle. Moisten edges and fold over as if making a perogy and seal firmly.
  • 6. Put on cookie sheets.
  • 7. Bake at 350°F for 10 minutes or until done. Let cool and ice top with white icing.
  • 8. To Prepare Date Filling:
  • 9. In a saucepan, combine dates, apples and water. Cook, stirring constantly, until mixture thickens. Cool completely.

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

2 cups brown sugar
1/2 cup sugar
1 cup butter
3 eggs
2 1/2 tsp vanilla
1/8 tsp almond extract
3 cups flour
1/4 tsp ground allspice
2 1/2 tsp ground cinnamon
1/8 tsp ground cloves
1/4 tsp tumeric powder
1/2 tsp baking soda
2 tsp baking powder
1 cup finely chopped pecans
2 8oz pkg dates finely chopped

Steps:

  • 1. Cream brown sugar sugar and butter
  • 2. Add 3 egg vanilla extract and almond extract to mix and cream together
  • 3. Add all dry ingredients together with flour
  • 4. Mix 1/2 dry ingredients together until well blended add remaining dry ingredients until well blended
  • 5. Add dates and pecans mix togather stir until well blended
  • 6. Drop by tsp fulls onto ungreased cookie sheet

3 tablespoons sugar
1 teaspoon salt
4 cups flour
1 cup sour cream
3 eggs, beaten

1 1/2 cups mashed potatoes

Steps:

  • Dissolve yeast in warm water and then mix into remaining ingredients to make dough. It will be sticky, so refrigerate overnight.
  • Mix filling ingredients.
  • Working with small portions of the dough at a time, roll out and cut dough with circular cookie cutter. (A margarine container or soup can work well, too -- just depends how big you want the meat buns).

1 ½ pounds ground beef
1 onion, finely chopped
1 teaspoon salt
ground black pepper to taste
dried dill weed to taste
1 (.25 ounce) package active dry yeast
¼ cup warm water
1 cup milk
3 eggs
½ cup vegetable oil
2 tablespoons granulated sugar
1 teaspoon salt
4 cups all-purpose flour
3 cups oil for frying

Steps:

  • In a medium skillet over medium heat, cook the ground beef until evenly browned; drain. Stir in the onion and cook with the beef until translucent. Sprinkle in salt, pepper and dill weed to taste. Allow to cool before using.
  • Dissolve the yeast in the 1/4 cup of warm water and place in a warm location until frothy, about 10 to 15 minutes. In a medium saucepan over low heat, warm the milk and gently whisk in the eggs, oil, sugar and salt. Remove from heat.
  • Place half the flour in a large mixing bowl and gradually stir in the milk mixture. Then add the yeast solution alternately with the remaining flour, stirring after each addition. Mix well. Knead until the dough forms a ball and does not stick to the bowl. (Note: Start with the 4 cups of flour. You may need to add more, a little at a time, as you knead the dough). Cover the bowl with a clean cloth. Set in a warm location and allow to rise until doubled in volume.
  • Remove dough from bowl and place on a lightly floured surface. Pinch off pieces approximately the size of golf balls. Roll the pieces into disks about 3 1/2 to 4 inches in diameter.
  • Fill center of each disk with a heaping tablespoon of the cooled meat mixture. Fold disks over the mixture and firmly pinch edges to seal. Arrange on a flat surface and allow to sit approximately 10 minutes.
  • In an large, heavy skillet or deep fryer, heat the oil to 375 degrees F (190 degrees C). Deep fry the piroshki in batches until golden brown on one side; gently turn and fry the other side. Remove and let drain on a plate lined with paper towels.

Pronounced parr-ish-kea. This is a traditional Ukranian dish handed down from my wifes mother to her and is a delicious addition to any Roast or fried or baked meal. Goes with anything.

10 cups flour
2 eggs
1/2 cup sugar
1 tablespoon white vinegar
1 cup vegetable oil
1 cup scalded milk (cooled)
1 pint warm water
1 teaspoon salt
1 (1/4 ounce) packet yeast
2 -3 lbs potatoes
3/4 cup Cheez Whiz (original flavor) (optional)
salt and pepper
1 large onion, finely diced
1/2 cup butter or 1/2 cup margarine
1/2 pint whipping cream
fresh ground pepper
salt

Steps:

  • Dissolve the sugar in the lukewarm water, sprinkle the yeast over it and let stand 10 minutes. Combine the remaining ingredients add to the yeast mixture. Add enough flour to make a soft dough. Knead on a floured board or counter top until smooth and satiny. Place in a bowl cover and let rise until double, punch down knead a few times and let rise again. (About 1hr-11/2hr. total).
  • Meanwhile peel,dice and boil potatoes until done, mash with potato masher, add salt and pepper and Cheez Whiz if using. Allow to cool.
  • Roll dough out to about 1/4 inch thickness and cut into 11/2 or 2 inch squares or circles.
  • Place about 1/2 tsp of potato mixture in the center of the dough fold over, sealing the edges well.
  • Place on cookie trays and bake in pre-heated 350 deg oven for about 15 minutes or until golden brown.
  • For the sauce, saute the butter over medium heat until bubbly, add onions, salt and pepper. When onions are translucent, turn heat down to medium low and add whipping cream.
  • Bring to a boil and simmer 5 minutes more.
  • Place baked perishkes in heat proof or oven proof container.
  • When sauce is done, pour over perishkes, stir, let sit for 5 minutes and enjoy.
  • Note: When they have cooled they can be placed in zip lock bags without the sauce-they freeze well.
  • When you want to re-heat them, place in Corning Ware or similar dish, microwave for about 3-5 minutes and pour freshly made sauce over them, stir and serve.
