GRANDMA'S MEATLOAF WITH OATS

Grandma's Meatloaf with Oats image

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

GRANDMA'S FAMOUS MEATLOAF WITH SALTINES

Grandma's Famous Meatloaf with Saltines image

This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Categories     Meatloaf

Time 1h10m

Yield 1 meatloaf, 4-5 serving(s)

Number Of Ingredients 8

1 lb ground beef
2 eggs
salt (to taste)
pepper (to taste)
1 onion, chopped (Optional, I usually omit it or use a teaspoon of dried minced onion. You also don't need the whole o)
2 -3 tablespoons ketchup, heaping
1 tablespoon yellow mustard, heaping
1 cup saltine crumbs, crushed. (This is usually most of one sleeve of saltines.)

Steps:

  • Mix all together; I generally use my hands.
  • Form mixture into a loaf shape.
  • Put in a baking dish (I use a pie plate).
  • Bake at 350 for 1 hour.
  • NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

Tips:

  • Use fresh, high-quality ingredients: The fresher the ingredients, the better the meatloaf will taste. Use ground beef that is 80% lean or higher, and make sure the other ingredients are also fresh and of good quality.
  • Don't overmix the meatloaf: Overmixing the meatloaf can make it tough. Mix the ingredients just until they are combined, and then stop.
  • Let the meatloaf rest before baking: This will help the flavors to meld and the meatloaf to hold together better.
  • Bake the meatloaf in a preheated oven: This will help to ensure that the meatloaf cooks evenly.
  • Don't overcook the meatloaf: Overcooked meatloaf will be dry and tough. Cook the meatloaf until it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf cool before slicing: This will help the meatloaf to hold together better and make it easier to slice.

Conclusion:

Grandmother's Meatloaf is a classic comfort food dish that is easy to make and always a hit with family and friends. With its simple ingredients and flavorful sauce, this meatloaf is sure to become a favorite in your home. So next time you're looking for a hearty and satisfying meal, give Grandmother's Meatloaf a try. You won't be disappointed!
