Good Cookies!! You'll be giving out this recipe forever!!! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven. This allows them to "flatten" and firm up, also make sure you use rolled oats, not instant! Please don't let all the ingredients scare you away from this recipe.

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups rolled oats
1 cup wheat germ
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup flaked coconut
2 cups chopped pecans
1 cup chopped pitted dates

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. In a separate bowl, combine the oats, wheat germ, flour, baking powder, baking soda and salt. Stir the dry ingredients into the creamed mixture. Finally, mix in the coconut, pecans and dates. Very tasty homestyle cookies. This recipe is from my college housemother. There is lots of fiber in here to offset the guilt of the sugar and fat. I use wholewheat pastry flour, but you can use the flour of your choice - it is not critical to the outcome. The chocolate chips and flax are optional. You will need a strong arm to mix the dough - I recommend a stand mixer.

1 cup vegetable oil
1 cup granulated sugar
1 cup brown sugar, very loosely packed
2 eggs
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups old fashioned oats
1 cup unsweetened coconut
1 cup wheat germ
1/2 cup nuts, chopped
1 cup semi-sweet chocolate chips
1/4 cup flax seed meal

Steps:

  • Preheat the oven to 350°F.
  • Cream together the oil, both sugars, eggs and vanilla.
  • In a separate bowl, mix flour, baking soda, baking powder, cinnamon and salt.
  • Add the flour mixture to the oil mixture and mix well.

12 ounces good-quality chocolate, chopped into chunks, or 1 1/2 cups golden raisins, or 10 ounces toffee pieces
