1 cup (2 sticks) salted butter
2 cups powdered sugar
1 1/2 cups graham cracker crumbs
1 cup creamy peanut butter
20 ounces semi-sweet chocolate chips

Steps:

  • Grease a 9x13 baking dish with butter, set aside.
  • Place the rest of the butter (that you used to grease the pan with) along with the other stick of butter and place them into a large microwave-safe bowl. Microwave for 30 seconds. Continue to microwave in 15-second intervals until melted.
  • Into the bowl with the melted butter add the powdered sugar, graham cracker crumbs, and peanut butter.
  • Stir until combined well.
  • Immediately spread peanut butter mixture into the greased baking dish and smooth it out. Place it in the freezer for 30 minutes to set.
  • While the peanut butter layer sets in the freezer, place the chocolate chips into a microwave-safe bowl. Microwave in 15-second intervals, stirring each time until the chocolate is melted and smooth, do not overcook.
  • Spread the melted chocolate on top of the peanut butter mixture.
  • Place it back into the freezer until the chocolate is just set but not frozen, about 10-15 minutes. If they're totally frozen, it's too hard to cut into bars.

1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted
2 cups old fashioned oats
1/4 cup slivered almonds, toasted, *see Cook's Note
1/3 cup miniature chocolate chips

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
  • In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
  • Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.

4 cups old-fashioned oats
1 ½ cups chopped pecans
1 ½ cups slivered almonds
1 cup coconut flakes
½ cup vegetable oil
⅓ cup packed brown sugar
⅓ cup honey
¼ cup maple syrup
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
¾ teaspoon salt
2 cups dried cranberries

Steps:
